What can I make for (a veggie) dinner with potatoes that isn't cottage pie?

We're on a super tight budget. I have a huge bag of spuds.

My potatoey repertoire includes:

Lentil cottage pie
Veggie burgers with wedges
Mashed potato
Roast potatoes (with a nut cutlet and veg)
Jacket spuds
Leek and potato soup

But we've had all of that in the last 10 days already. So I'm after inspiration!

I'm contemplating trying to rostis with spinach and poached egg, but I think the dcs will be a bit 'meh' about it!

I have a nicely stocked store cupboard for the time being.....

Cheesy mashy beany pie. Basically all of that in layers in a dish in the oven. I suppose you could make your own baked beans - but I'd use heinz.

How about potato kugel? I add some dried milk powder to it to give it extra thickness and protein.

Recipes I use regularly from bbcgoodfood:
Spiced carrot and lentil soup (not potatoes but super cheap and eaten by everyone)
Vegetable curry for a crowd (makes 2 meals)

We are also having cheese and potato pie and beans tomorrow. There is a great recipe on the Nigella website which is very easy.

Mushroom, leek and Quorn pie with mashed potato topping.

Also there's a recipe that might have been an Annabel Karmel one that we still eat nowadays as a real comfort food - it's basically a 'bake' that you do in a big dish and consists of a layer of baked beans, a layer of chopped spinach a thin layer of cheese sauce and then mashed potato topped with the option of some grated cheese and sliced tomato for decoration.

Indian Potato curry to go with Chapatis.
Chop and boil spuds with salt, turmeric. Heat oil, add mustard cumin and chopped onions with ginger and optional chilli. When almost cooked, add the spuds and stir. pour in some water and mash some of the potatoes so it is thick, but not too thick. Finish with lemon and curry leaf.

I'm vegan now but was vegetarian for over 20 years and loved baked bean pie Grin. My children are vegetarian and love it. Fry some onions in butter add a tiny bit of sugar to caramelise, two tins of beans plenty of pepper and salt. Then some cheese and butter. Boil potatoes and mash with milk, butter (and cheese if you wish). Pop the beans into a dish top with mash and grated cheese then grill. Mine love it with sweet corn.

It's one of my families favourites.

Veggie Cornish pasties are good. You can make the pastry and pototo, onion and cheese filling. Then make into mini pasties. At this point you can freeze as many as you like and just cook the ones you want to eat that day. When you want this win freezer you can bake straight from frozen for 20-30 mins depending on size.

Ermgah, my housemate bought a sack of potatos to save money one year. IT was AWFUL. He ONLY hate potatoes for ages and I can tell you, living with someone on an all potato diet is NOT worth the savings. Evidently you are going to supplement but this reminded me of his apocalyptic gas.

Gnocchi, bobay aloo, bombay alloo with cauliflower or other veg. Vegi samosas, croquet potatoes.

You can make a vegi moussaka using spuds instead of aubergine and of course you can make chips.

My lot would eat roasties every day! Garlic roasties, herby roasties, spicy roasties, roasties with other veg and cheese melted on top. Bubble n squeak, cheesy potato cakes, soup, sauté potatoes, homity pie, sag aloo, Spanish omelette, creamy quorn and leak pie with a mash top,

Potato gratin - cheap version of philadelphia replacement probably cheaper than the goats cheese in original. Milk. Can add squash slices or sweet potato if you have any. Serve with green vegetables (frozen broccoli probably quite cheap).

Pan haggerty , basically just sliced potatoes, onions and cheese, layered in a frying pan, dotted with butter or dripping and cooked with a lid on. The potatoes on the bottom get all lovely and crispy.
Egg and chips.

Egg and Potato gratin (softish hard boiled eggs and boiled potatoes oven cooked in cheese sauce). Nice with broccoli and if you fancy some extra carbs, crusty bread. Yum.

Eggs-in-their-nests: cut a hatch in the top of baked potatoes, scoop out a hollow, crack in an egg, finish in a hot oven for 15-20 mins.

You can make it more luxurious by floating cream and grated cheese on the top before the final bake. You could even hide a layer of wilted spinach under the egg (I've tried this with sorrel - yum!).

Can also be done with hollows in mash in an oven-proof dish.
