Ambient condiments to me are the sauces and stuff that you keep in cupboards at room temp not in the fridge. This includes tomato ketchup but I know that is controversial.

So mustard, basically? Ketchup etc goes in the fridge once opened in my house.

Tabasco is ambient. Except in our house it is permanently on the dining table as DH eats it with everything heathen

Mustard/vinegar/salt/pepper/ketchup/brown sauce/worcestershire sauce/soy sauce=ambient.

Mayo/salad cream=chilled condiments.

tbh fish sauce is probably ambient but the thought of fish not being refrigerable makes me shudder.

I have been eyeing up the shed for a clear out tomorrow. The problem is I suspect it's all the crap in it which is actually holding it up, and if I remove it the structure will crumble into rotten timber and dust. And then I would be told very firmly that IWBU for considering shed shopping as essential. So I'm going to leave it and continue safely reading on my sunlounger

Mustard is a spice. I have two different types of mustard seeds in my alphabetised spice rack. But I do agree that made up mustard isn't a spice. It's a condiment.
