My husband always claims not to want or need anything, so I usually just replace something he has broken. This year it's a phone and a scythe, but one year it was a pair of castration pliers.
In your case, OP you have two choices; either make him choose something or give him cash.

I feel your pain! Feel like I have never got a successful gift for DH. Have sent him out today to chose his own gift as I just can't be doing with his flat response on Christmas day.

DH is also impossible to buy for and always says he doesn't need anything. Every year I make him a hamper with snacks, beer, crackers, some nice cheese, salami etc. Sometimes DS and I will also make him some biscuits or cake. He's really into matcha so we'll make matcha shortbread or something like that.

DH is a nightmare to buy for - he tries to give ideas but he'd be happy with a big bar of chocolate.

But, over the years, I've learned to go for day's out.

So this year it's a theatre trip (if the theatres remain open...)

The year before last it was a gift voucher for a chain of cinemas so he could pick the film. Enough on it for the three of us to go together or for him to go three times if he preferred to go alone, plus a bit for a cola etc.,

The year before that it was a trip to the Shard on the week after Christmas when I knew he was off.

And the years before that I got him a ticket to see Question of Sport live with the previous year seeing a comedian he likes.

If he likes comedy/drama or whatever, it's worth a trawl through the local theatres or bigger city ones. There's so much usually on from plays to musicals and everything in between.

Or if he's into heritage you could get him membership of NT or something similar?

I've also bought DH books on gardening and a set of personalised tools - like trowels. I got him a plant trough with our names on it from Etsy which went down well and he did a lovely display in them.

And I've bought him flavoured coffees too as he loves his coffee!

Aha! You have your solution! Stick £50 in a saving account and tell him it’s the start of the motorbike fund. Birthdays and Christmas sorted for years……..!!!

My dh said he didn't want anything, yet he complains he has no t shirts.. so he's got 7 t shirts and a pair of slippers 🤷‍♀️ my present from him is thankfully more exciting !

I got him refresher lessons last year and he came back very sure he wouldnt feel like he would be confident enough to start riding again, sadly. He hasn't ridden since he met me 25 years ago.
