What foods are always in your freezer?

Trying to get more organised so thought it might be useful to share ideas.

We always have veggie burgers and a sliced loaf of our favourite bread, several flavours of ice cream, and some frozen fruit for chucking on breakfast or for smoothies. There's usually a portion or two of something like a lasagne for lunch, that was leftover from a dinner. When we go away I try to always freeze milk so we can always have a cup of tea no matter how late it is when we get home.

What handy items do you always have in that help you throw a meal together? I tried frozen chopped onions which seemed like a really useful timesaver, but they tasted kind of weird to me - maybe I should try them again?

We have 3 freezers and enough frozen stuff for 2-3 weeks.

  1. a freezer in an outbuilding which is full of bulk-prepped foods; so soffrito, sliced and chopped onions, mashed potato, blanched corn cobs, slow cooked onions, veg curry, pasta sauce, shakshuka sauce, stock (all kinds), bags of bones and veg bits to be made into something else.
  2. In the kitchen fridge-freezer I always have peas and green beans, ice cream, berries, cups of soup for the microwave, home made ready meals, ice cubes of pancake mix, a pack of wraps, sausages , bacon.
  3. a chest freezer of 'normal' stuff in the back of the garage: meat and fish, bread, oven chips, ice cream and lollies, pies and pasties, milk, butter, cheddar and so on.
We're pretty rural so like to maintain stock in case of bad weather/illness. The two big freezers can run on batteries/generator if we lose power.

Im not a prepper : we just live in the sticks 🙂.

Always chopped frozen peppers. Excellent for a shakshouka.
Always some frozen mash, for a last minute tea. The nice stuff that’s just potatoes, butter and milk. Not smash style!
Frozen chopped coriander and ginger.

Chicken Kyivs too, and some nice fish pie.

I love frozen peppers and I haven't been able to get them lately. I tried Tesco and Iceland, although maybe Lidl will have them.

We always have fish fingers, potato waffles, a Chicago town pizza and ice cream but I think you were probably hoping for something more inspiring OP Grin

Brown stuff. DH still can't get his head around cooking for 2 or 3 rather than 5. He also likes to catch cook so cooks for 10 and the dresses it. The problem is we don't really use it once it's there. We have 2 freezers full of the stuff.

Riverlee · 06/04/2023 21:43

Frozen chips
pizza
frozen peas
mince - cooked in bolognese sauce (so can defrost for shepherds pie, spag bol etc)
icecream
frozen fish

mondaytosunday · 06/04/2023 21:45

Frozen veg, baked potatoes, fish filets, a few magnums. The baked potatoes are a must as you can make a meal around them, the veg so there's always some available. I would put bread in there (no room) as I usually toast it and always end throwing away the last quarter.

TrobadoraBeatrice · 06/04/2023 21:46

DP despairs at my insistence on filling every last crack of the freezer... We have (from memory):
Ice cream (various tubs and lollies)
Bags of veg (peas, sweetcorn, spinach, soy beans)
Parathas, garlic bread
Cooking ingredients like galangal, turmeric root, curry leaves, lime leaves
Oven chips, mini hash browns
Fish fingers, breaded chicken, pizza
Occasionally gyoza, probably some wonton wrappers too
The odd portion of food (but not often)
Assortment of raw meats and fish
A few random extras like butter, possibly a tub of clotted cream in there too

Luredbyapomegranate · 06/04/2023 21:51

Sliced Bread, pitta, ice, spinach, peas, berries, roast veg (made by me), those frozen baked potatoes, mash (surprisingly good), McCains oven chips, fish fingers, pizza, maybe sausages, grated cheddar, grated Parmesan cheese, ice cream, sliced up cookie dough

SquigglePigs · 06/04/2023 22:00

I like to keep a well stocked freezer.

Selection of frozen veg - peas, sweetcorn, broccoli and cauliflower.

Frozen chips, has brown bites, breaded chicken, kievs, scampi and fish fingers

Ciabatta rolls (for emergency garlic bread!), pittas and a bit of sliced bread (I don't like it for sandwiches but good for toast

Chicken breasts, salmon and white fish (bass/bream/whatever happened to be on offer) - fish defrosts so quickly it's great for an emergency dinner

A few portions of home cooked food that's ready for a quick tea - usually a selection of bolognese, chilli, tomato veggie pasta sauce, chicken curry, beef stew etc.

Then there's usually random bits I've picked up on sale or at farmers markets that I didn't get round to using so got chucked in the freezer (at the mo there's a pack of sausages, diced venison, a small gammon joint and some beef mince)

Oh and some ice cream (more in summer including ice pops etc)!

HappyBirthdayLydia · 06/04/2023 22:03

Gosh fingers
Waffles

Also fish fingers. Oh for an edit button!

KohlaParasaurus · 06/04/2023 22:06

Frozen chips, lots of different frozen vegetables, tempeh, quorn mince, black pudding, bacon, sausages (meat and veggie), a few blocks of butter, an emergency 2L bottle of full fat milk, a pizza or two, and yellow stickered bread and cakes. Add that to what I've got in my kitchen cupboards I could usually feed a dozen people for a week.

ChillinwiththeVillains · 06/04/2023 22:06

Forgot to include wild salmon, wild prawns and white fish
and falafel and duck roll pancakes and gyoza.
Also any slow cooker meat that I didn’t use when planned. In the winter I usually slow cook two or three meals a week.

I am a 90% scratch cook (using pre chopped veg tbf) but like having an easy Friday night supper.

Only me here.... so here's what's in my freezer now.

Sliced wholemeal bread in portions of two.
A small carton of milk for emergencies
Grated butter for baking and emergencies (a few of them, but food related only lol!)
Packs of frozen berries for smoothie
Pack of fresh spinach frozen as it is, this is great to take a handful out for the smoothie.
Sliced bananas
Ice cubes (no fancy big American family size fridge freezer here).
Frozen lemon slices
Home made cheese scones, uncooked just ready for the oven.
Salmon, fresh fish whatever is on offer
Frozen home made mash or shop bought
Small bag of big fat fries for a scoff night
White chocolate ice cream
Grated parmesan and mature cheddar
Sausage rolls.

I think I'll be alright. Love reading what you all have for your families.

I don’t like the Ocado soffrito and the pieces are a bit large which puts off my fussy children, hence I make my own! Doesn’t take long in the food processor. However you have to be careful when freezing - stir up the mix in the freezer every 30 mins or so or it turns into a massive solid lump that you can’t easy extract a portion from.

Helpful, thank you! And thank you @Donotgogentle , alas Ocado do not exist in Scotland, but may check in M&S…

HelloMrBond · 06/04/2023 22:38

Ours is currently bursting due to the time of year, as it’s post shooting season so it’s filled with pheasant and partridge breasts, duck and a few grouse. To add to that, our farmer friend had some lambs processed two weeks ago, so we’ve got a lamb in there too now.

RobertaFirmino · 06/04/2023 22:43

Donotgogentle · 06/04/2023 20:58

Soffrito - use it for so much cooking - bolognaise, soups, curry.

It makes for much less food waste as I don’t need to have onions, carrots & celery in stock. And it’s easy.

Soffrito is one of the best inventions in the world! Saves so much time, effort and money!
Other supermarkets might call it 'chef's mix' or 'meal base'.

FusionChefGeoff · 06/04/2023 22:45

Chopped onions, chopped peppers, mini corn on the cobs and mixed veg.

Quorn nuggets and fish fingers for freezer dinners!

twoshedsjackson · 06/04/2023 22:58

Basic casserole; eg just beef, to be bulked up with different vegetables for variety, eg tinned cherry tomatoes one time, mushrooms another, onions another, when it comes out of the freezer.
Frozen fruit, crumble mix, icecream
Semi-cooked cookies for entertaining, so that they really do get saved for visitors
