To ask what have you done with your leftovers? I made something a bit different.

It was chicken ham and Brussels pie. Absolutely delicious. It had blue cheese in it too. All gone now. I'm definitely going to make another pie soon. I haven't made one in ages. This one only had pastry on top. I made my own but says to use ready rolled.

What have you done?

To ask what have you done with your leftovers? I made something a bit different.

I know that says turkey but can use chicken.

I made a pie too, with a shortcrust pastry lid. Pie filling was the leftover chicken, gravy, bacon and stuffing, with leeks and mushrooms which I sauted in butter first. We ate it with the leftover veg from Christmas day. Very nice!

Normally we have turkey and I make a turkey puff, based on a Delia Smith recipe. Turkey, leeks, bacon/gammon, mushrooms, cream or creme fraiche, a little stock or gravy, all mixed together and spread on one half of a piece of puff pastry, then the other half is folded over, bake until golden brown and filling is hot. Delicious hot or cold.

I bought some of those frozen giant Yorkshire puddings and layered up the leftovers inside them with slices of turkey in-between each layer, then put mashed potato on top and scored with a fork to fluff the top of it up a bit. Roasted in the oven for around 15-20inutes for it to heat through and the potato top to crisp up a bit then served with gravy.

I made a pie too! With turkey, bacon and leeks. It was lovely. Mine had pastry at the bottom as well as over the top, turned out really well.

Boxing day - Turkey tikka masala
27th - turkey chilli with chipotle chillies and dark chocolate (never been brave enough to add it before bit it REALLY works)
Today - soup.

Kung pao stir fry with the leftover sprouts, parsnips and carrots. I added broccoli, tofu and cashews, served with noodles and sesame seeds over the top. Absolutely lovely.

The leftover roasties were eaten Patatas bravas style with spicy lentil chilli from the freezer. I’ll definitely do that again.

Bubble and squeak.
Shepherd's Pie made with chopped roast lamb and topped with bubble and squeak instead of mash.
Turkey, gammon and cheesy leek pie.

Chicken ( because we had kapon not turkey ) with a teriyaki sauce, shop bought, served with noodles and spring onion & cashew nuts. It was lovely.

Previously we've had leftover pies.

But the best leftover meal, for me, is a repeat of xmas day.

I usually make a turkey, gammon and broccoli pie I’m a white sauce with puff pastry top, served up with the leftover veg and roast potatoes.
Didn’t host this year, so I’ve no leftovers! 😭

I use dark chocolate in my chilli. Or cocoa powder.

Cold meat. and
A goose based broth with stock made from the bones and reduced. It is frozen now.
When we come to use it there will be onions and beans and the real scraps of goose meat perhaps a sausage each.

I had roast duck, so made duck in plum sauce with egg fried rice and stir fry veggies. My partner still raves on about it!

I usually do a turkey and ham pie, but this year DH has eaten too many enormous ham sandwiches so it will be a turkey pot pie instead. Turkey curry tonight though 😋

Most of mine went towards buffet food as cold cuts and into a quiche. Bubble and squeak with leftover veg was a massive hit at always.

This morning I made Nutella pancakes for breakfast and decided to see that leftover brandy butter was like on them. It was bloody lovely!

Turkey & noodle soup - basically stock with turkey, shredded sprout tops, carrots, a bit of broccoli I found lurking in the fridge, sweetcorn, spring onions, ginger, soy sauce. Let it all boil for 15 mins until veg is cooked, then add straight-to-wok noodles until they have softened.

Pie, with all the leftovers, mixed with condensed mushroom soup. Bubble and squeak with any other veg left over, with egg on top.

Boring, but I made turkey curry. I was going to make soup too but I was sick of the sight of that bloody carcus so I binned it!

Turkey, bacon and leek pie mix with mustard and creme fraiche. Will freeze it and make another time.

Also made turkey soup which we've mostly eaten.

Love this recipe - turkey parcel! We used to have it years ago.

Everything went in the bubble and squeak. Roasties, cabbage, parsnips, carrots, stuffing, cut up the last of the pigs in blankets too. Topped it on some sliced ham and topped it with a fried egg. Splash of brown sauce, was lovely.
