To ask what have you done with your leftovers? I made something a bit different.

It was chicken ham and Brussels pie. Absolutely delicious. It had blue cheese in it too. All gone now. I'm definitely going to make another pie soon. I haven't made one in ages. This one only had pastry on top. I made my own but says to use ready rolled.

What have you done?

I always make Paul Hollywood's Boxing Day pie, although it was today before I got round to it this year!

It's basically a hot water crust pastry pie filled with layers of leftovers - we had pheasant this year so layers of pheasant and stuffing. It's always v popular.

We had a second Christmas meal on Boxing Day, just roasted more veg and potatoes. Paella with the turkey leftovers yesterday.

We just re-heated the leftover meat but shredded it and added a gravy sauce, microwaved the mashed potatoes and re-roasted the roasties. To go alongside it we fried some sprouts and steamed some broccoli and served it with some more Yorkshire puddings. It was essentially Xmas dinner part 2.

I get freaked out by Christmas leftovers. All year we are told not to reheat poultry Nd then we are all supposed to make pie and reheat, make stock which reheats and then is reheated whenever it’s used…I don’t get it. I’ve frozen the meat in slices to go in sandwiches and salads and binned the carcass.
I don't think you are meant to re-heat it from frozen if the turkey was previously frozen. But if you cook a bird from fresh, I think its fine to reheat the meat once, as long as its been cooled down rapidly and kept in fridge, and of course it is reheated very thoroughly.

Why would you throw out leftovers? My in laws do this and I hate it. They give them to me to take home. Grin Such a waste otherwise. My pie has done us two meals and I’ve still got some turkey in the fridge (I realise I sound like the mn chicken..).

Yes I don't understand throwing away leftovers either. It's a shocking waste imho. And lots of things taste better the next day! My all time favourite meals are those compiled from Christmas leftovers.

I bought some of those frozen giant Yorkshire puddings and layered up the leftovers inside them with slices of turkey in-between each layer, then put mashed potato on top and scored with a fork to fluff the top of it up a bit. Roasted in the oven for around 15-20inutes for it to heat through and the potato top to crisp up a bit then served with gravy.
That sounds absolutely delicious. Definitely trying that one next year.

We have Jamie Oliver Turkey (and gammon) risotto with the leftover veg (including cauliflower cheese) on the side and gravy over the top. Had a break from leftovers yesterday and today it's leftover turkey/gammon/potato/gravy pie with extra veg.

@Shinychestnuts that’s not what I was taught. And anyway, a large Turkey isn’t cooled rapidly, is it? It’s often wrapped to keep warm and in any case so thick that cooking will take hours.

We had mutton. I fried the leftovers so they went crispy, added garlic, chilli, soy sauce and rice wine vinegar and served with jasmine rice and stir fried veggies.

We had duck chicken and beef
Most of the beef and chicken has gone into sandwiches and on Boxing Day buffet - we are having the duck done as crispy duck with pancakes
Im gluten free so wrap mine im iceberg lettuce

I made two leftover pieslast year as last minute cancellations meant we had tons. I loved the pies and will definitely do them again if ever I have leftovers!

We had gammon, turkey and goose over a week and still going (plus some frozen).

As well as traditional roasts we’ve had 2 x curry, pies similar to yours and wraps for lunch.

I LOVE Christmas food as so much can be made with the leftovers and turkey is just a great receptacle for tons of other flavours. The shop seems expensive initially except I haven’t been back for a week and will just top up with lettuce tmrw and still have tons of goodies to eat for main meals.

Individual turkey and ham pies for the freezer - sauce made with leeks, shredded sprouts, herbs and mustard (& the leftover chopped stuffing) and some topped with puff pastry, some with sliced potatoes.

Sat out Christmas this time around but in past years it's been goose to goose stock/confit to cassoulet. So so comforting.
