To ask what have you done with your leftovers? I made something a bit different.

It was chicken ham and Brussels pie. Absolutely delicious. It had blue cheese in it too. All gone now. I'm definitely going to make another pie soon. I haven't made one in ages. This one only had pastry on top. I made my own but says to use ready rolled.

What have you done?

But if you cook a bird from fresh, I think its fine to reheat the meat once, as long as its been cooled down rapidly *@Shinychestnuts* that’s not what I was taught. And anyway, a large Turkey isn’t cooled rapidly, is it? It’s often wrapped to keep warm and in any case so thick that cooking will take hours.
I don't purport to be an expert Cardibach - my post was simply intended to be helpful - I am careful about food hygiene and it is what I have done for 25 years without any incidence of food poisoning.

Used Jamie Oliver turkey leftover pie as the base recipie but with a few tweaks, used up last bits of turkey, ham, stuffing, gravy and double cream. With a Puff pastry top and last veg remnants as the sides.

Boxing Day we always have Christmas dinner part 2, more delicious in my view than Xmas day.
Monday was turkey and pickled onion sandwiches for lunch and cold turkey, chips, salad and coleslaw for tea
Today, turkey sarnies with lashings of mustard for lunch and turkey curry tonight.
Might try a pie or risotto next year, they both sound delicious.

I have a very hungry teenage boy. The leftover were gone by Boxing Day lunchtime! We didn't have masses to be fair as it ended up just being us when I caught covid so the shopping was drastically reduced to save wastage.

I love to make turkey curry,! The recipe I use also uses leftover roast potatoes which work amazingly well (I always wildly overestimate how many roast potatoes we'll eat).

This year though we had a turkey breast so our leftovers were just enough to put in a large vegetable turkey soup (we're trying to drop some pandemic pounds.) It's very tasty though.

Had another Christmas dinner on Boxing Day. Made a beef curry for the freezer. Just about conquered the north face of the ham which has appeared in sarnies on Christmas day, been sizzled in the frying pan with eggs served with chips and peas, sandwiched with chedder mozerella and pesto for eggy bread sandwiches. Have frozen what's left.

I always make sure I cook too much veg then fry it all up together the next day and have it with gravy and Yorkshire puddings. It's delicious.

DH is currently making the very same, it's his leftovers go-to. He made a huge vat of soup from the turkey carcass this morning.

We've already had several sandwiches, a broccoli and stilton soup and a turkey pasta. We'll also be having a turkey, ham and leek pie with a cheese sauce and a puff pastry lid, and probably another pasta bake with the final bits of turkey (which are all in the freezer already). The leftovers are my favourite bit of Christmas! Grin

Just a thought, should I be binning leftover turkey now if I haven’t frozen it already? Cooked it on Saturday (some went into pie but still some left uneaten)

We had Mary McCartney's nut roast so I mixed in some breadcrumbs and an egg and made it into burgers. Very nice too.

Cold with mash & pickles then Turkey & vegetable stew (boiled the carcass for a couple of hours, remove meat from bones, add veg & yum). Some stashed in freezer for later.

We also had pies on Boxing Day - we each made our own mini one with leftovers plus gravy. The next night it was beef curry using the leftover beef - delicious! Last night spaghetti carbonara with leftover gammon.
