To ask what have you done with your leftovers? I made something a bit different.

It was chicken ham and Brussels pie. Absolutely delicious. It had blue cheese in it too. All gone now. I'm definitely going to make another pie soon. I haven't made one in ages. This one only had pastry on top. I made my own but says to use ready rolled.

What have you done?

I need to get on and cook the red cabbage that should be contributing to the leftovers. Maybe that’s tomorrow’s job. I’m also making (veggie) haggis sausage rolls with some puff pastry I found in the freezer. I wish I had cranberry sauce left but I think apple sauce will do a good job instead.

Making ham, leek and potato pie with the leftover Christmas Day ham tomorrow. Might add Brussels sprouts.

We've also had noodles cooked with leftover goose and shredded carrot (toddler loved this); soup made with leftover roast veg and chestnuts and goose stock (toddler way less keen); pasta with cream, peas and ham (again toddler-friendly); goose, ham and Cranberry sauce sandwiches; and homemade pizzas topped with leftover cheese and charcuterie.

All really nice and feel like we've done justice to our leftovers, but I'm also ready to stop eating quite such rich food for a while now!

@DukkaTheHallsWithBoughsOfHolly, I did an egg wash instead of brushing with milk, although it did seem a bit of a waste of egg. Next time I’ll save a bit of pre-scrambled egg if I know I’m baking a pie.

LOL, I really feel ambivalent about the main meal on The Day. But I LOVE leftovers! Most of the meat is eaten in sandwiches, which I love. Thankfully, it is just me, so I can do as I please!

I made stock with leftover chicken, bones, onion, carrot, celery, peppercorns and bay leaves. Used the stock to make leek and potato soup with added leftover ham. Stirred in a little cream at the end. Doesn’t sound very exciting but it was actually delicious.

I made my usual sage and turkey soup/stew thing, a turkey curry with some maysan curry paste and as an experiment I mixed sausages (removed from casings) and leftover stuffing with some wensleydale and used it as a pie filling - was much nicer than I thought it would be.

No turkey this year, but the stuffed duck leftovers were great heated and encased in a roll.

I love some of what's been posted here pie, puff and giant Yorkie!

My usual if it's not a stuffed bird is fried rice.

We had crispy turkey with Chinese pancakes hoisin and spring onion/cucumber one day

And then finished everything else with this - even mash leftover from Christmas Eve and I whacked in all the leftover veg too. We usually have a turkey and ham pie. My dh makes it and I don't know where the recipe is from but it has puff pastry and tarragon in it. I love it but the kids don't so this year we had a turkey tikka masala recipe from kitchen sanctuary which are always good. Just a small turkey this year so that was that

Had Lamb ( as son dislikes turkey) and gammon. Made shepherds pie, and a lamb tagine served with couscous. Cold meats and salad boxing day, turkey became noodle soup and veg, already frozen. Ham became sandwiches, in croissants and cheese, or with eggs for breakfast. no need for waste.

I made the ham bone into ham stock yesterday and I'm going to hopefully turn it into ham and bean soup today! I'm looking forward to it, but I couldn't find any dried lima beans at the store, so I had to buy tinned. Also, I had to buy butter beans, since in the UK you don't have lima beans, but I think they are the same thing.

I love the sound of this!

I had some (bought/cooked) ham knuckles this year from which I have made stock.which has gone in to pea soup which we serve with shredded ham on top. It's lovely after a long dog-walk!

I'm seriously considering buying more turkey so that I can try some of these amazing recipe ideas. We had roast on Christmas day and the other half of the turkey went with the family to the in-laws on boxing Day so that I could enjoy my Christmas present, half a day home alone, lol. What does everyone do with the big bowl of wobbly turkey juice jelly that came out of the roasting tin?

I cooked my turkey on top of a layer of chopped onion, celery and carrot then after the baking pan goes on the stove to simmer. Whilst simmering I added some rosemary & thyme (any herbs you like can be used), some chicken stock, glug of booze (wine/port/sherry - whatever you like) thickened it up with cornflour slurry then strained it through the colander. Bloody lovely gravy.

I cooked pork on 26th so I did a pan of pork, peppers of which I'd bought too many, onions, mushrooms also bought too many, lots of garlic and some jerk seasoning, lovely with rice.
I've just had the Great Fridge Clearance, all those little pots of Why the hell did I keep this? What the hell's this? Much more space, just needs a good clean.
