It was chicken ham and Brussels pie. Absolutely delicious. It had blue cheese in it too. All gone now. I'm definitely going to make another pie soon. I haven't made one in ages. This one only had pastry on top. I made my own but says to use ready rolled.

What have you done?

Just a thought, should I be binning leftover turkey now if I haven’t frozen it already? Cooked it on Saturday (some went into pie but still some left uneaten)
Nooo!! I’m using the last of mine tomorrow in the curry.

Your pie looks immense. Love the decoration. How do you get it so golden? Mine was so tasty but didn’t brown as much as I thought it might. Eating the rest tonight.

@cardibach @Shinychestnuts I don’t believe we are told not to reheat poultry. I looked into this when I started batch cooking. The guidance on food safety on nhs states the only thing to avoid is defrosting meat/fish then deciding not to cook it and putting it back in raw to freeze again. But for Xmas dinner i.e. defrosted and cooked turkey, it’s safe to refreeze once. Cool it as quickly as possible, ideally within two hours. I carve all the meat at once anyway so it cools well before 2 hours. Then freeze and when you want to eat it you can safely defrost it in the fridge overnight, heat it thoroughly and eat it within 24 hours, not re-freezing again. This is obviously very strict and most people in their own kitchen can skip a few steps here and there and suffer no ill effect, as long as they don’t ignore the golden rule of not refreezing defrosted food without first cooking it.

We have had: Beef, broccoli and cashew nuts noodles (to use up leftover roast beef).
Turkey and ham pie.
Turkey and sausage pilaf with leftover vegetables.

Sandwiches with the goose. Stuffing and cauliflower cheese went in the freezer to do another roast. The other bits were nibbled on. The carcass made a stock, which was turned into risotto. Nothing wasted!

Just cooking a ham leftovers thing, in a creme fraiche and mustard sauce with root veg, but with a topping of thinly sliced potatoes instead of savory crumble.
We've already had turkey and mushroom stew and turkey soup, with 5 portions in the freezer.

Turkey curry, ham egg & roasties with the leftover veg, and just masses of sandwiches. Had our last bits of turkey in rolls as a picnic on the beach today. Also the cat and dogs have had a fair bit Smile

Turkey tikka masala on Boxing Day and a Christmas dinner frittata yesterday with the rest of the leftovers (turkey, chopped roast potatoes, sprouts, chestnut and bacon). I did have to chuck some red cabbage I’d made with apples and cinnamon, purely because I was bloody sick of it!

I'm going to do rice paper rolls with the leftovers.
@loveablequalities We have rice paper rolls too. I fry shredded turkey in sesame oil, 5 spice, ginger and garlic then have a pile of sliced cucumber and spring onions and some sambal and hoisin sauce for pouring or dipping and everyone helps themselves.

I had a lush nut roast and red onion baguette yesterday! With one of those bake at home baguettes straight from the oven. We did beef for the meat-eaters and didn't have any leftovers of that.

Xmas day was leftovers for me, is made a beef stew on 23rd and I finished eating it on 25th!

DH will hoover the turkey breast meat but won't normally touch the rest. I had a brainwave and stuck all remaining leg meat etc. in the food processor with a slice of bread, an onion, some mushrooms and an egg, blitzed it then made burgers/rissoles.

Typically, DH ate it... probably needed a chilli adding too but easily fixed with chilli sauce!

Yesterday it was turkey fricassee in cream and white wine.

And I get to do the dinner all over again this weekend at my Dad's!

Followed an example from a friend and made enormous sandwiches like nakc's of Finsbury Park with an entire portion loaded in. Eaten by DDs and DH with absolute joy.

We had duck chicken and beef Most of the beef and chicken has gone into sandwiches and on Boxing Day buffet - we are having the duck done as crispy duck with pancakes Im gluten free so wrap mine im iceberg lettuce
JaceLancs - I think that Nam Viet spring rolls are gluten free (available in Sainsburys and made with rice flour]

Spiced parsnip soup as I had a bag left I hadn’t used.
Shared the turkey in gravy with dcat Grin
Sprouts with balsamic glaze as an alternative side.

HellieOldie Of course! It's a BBC food recipe and I usually tweak it depending on what ingredients I have on hand. It's also not a "gourmet" recipe since it relies upon using a curry paste (I favour a name brand balti curry paste) but my family always loves the results!

Also - the addition of mango chutney, which is listed in the recipe sounds a bit weird but don't skip it! It really added something to the curry and even my somewhat Indian food averse DH noticed and liked it.
