This one! But instead of saving the leftover oil, I toast thick slices of home made bread, drizzle the oil over then spread goats cheese on top. Delicious!

Get a jar of good quality tomato based pasta sauce.

Pour it into an oven proof dish with a splash of water.

Add whole chicken breasts to the dish ..one per portion.

Cover dish with foil...bake for 45 minutes. Remove foil and top with a sliced ball of mozzarella. Back in oven for 5-10 minutes

Serve with pasta

Tray bake chicken and chorizo

Chopped shallots and celeriac, diced chorizo and skin on chicken thighs.

Sprinkle the chicken skin with smoked paprika (DH prefers the sweet, I adore the hot kind).

Dollop of duck fat

Bake for 45-60mins in medium hot oven.

Add rocket or spinach for the lady few minutes or add raw at the end if you prefer.

chuck a leg of lamb in the oven green beans and mash potato practically cooks itsself! bit of faff with gravy but dead easy.

Shakshuka. It’s easy, everyone loves it and I always have the ingredients to hand (eggs, tomatoes, onions, garlic, spices, cheese to top). It’s what I make when I can’t be bothered to come up with something ‘interesting’.

My really lazy nice tea is just pasta, peas, with parmesan and butter. If I was feeling it I'd put salmon on too. Bang the salmon in the oven to bake in parcels, boil your pasta, add the peas near the end, drain it all, chuck butter and cheese and black pepper on, throw the fish on top. Gorgeous.

If I can be bothered doing something more, my favourite is the Jamie Oliver 5 ingredient fish curry with rice. SO nice, and really easy.

Part fry cubed potatoes and onions. Place on lamb chops with slivers of garlic and rosemary and add a bit more over the spuds and season. Bake for 20 mins, then add fresh chopped tomatoes for another 15 mins or so.

I love the tandoori salmon from the Quick Roasting Tin book. Only takes about half an hour and is delicious.

Chilli and lemon prawn linguine. Quick and delicious. Also chilli nachos with grated cheese and sour cream. A huge favourite with dc. Usually have home made chilli in freezer but on occasion will buy a chilli ready meal when a super quick meal is needed.

I've really enjoyed reading this thread, some great ideas to try.

I discovered this recipe in one of the many lockdowns and really enjoyed it, make it once a week now - Gordon Ramsay's spicy sausage rice -

I also love Nisha Katona's Indian recipes from this morning. Really easy and simple to make. I'd recommend gunpowder chicken, chicken korma, tikka masala and pineapple and coconut curry.
