You can only pick one recipe and you have to love it!

Mine would be tomato risotto with basil and mozzarella.

It's a winter one, mind, but we've loved it for over 20 years. Big baking potatoes brushed with olive oil, sprinkled with sea salt, baked, split lengthways, innards scooped out and mashed with butter, grated cheese and seasoning, then mix in a snipped up spring onion per potato, little tin of sweetcorn, drained, and some chunks of best ham (leave ham out to make vege). Pile mix back into skins placed an a baking tray, sprinkle a bit more grated cheese on top and pop back in the oven until the cheese is bubbling and golden. ☺️

I do Pasta + Regular Basil Pesto + Prawns... takes like 10-15 minutes and super easy.

Bean cassoulet with merenguez sausages (added advantage, I can rescue some out first for the pesky vegetarian before I add the meat, she has Linda McCartney chorizo sausages) and I serve with homemade bread

Meatballs in a red wine, red onion and bacon gravy with cheesy mash and some sort of roasted vegetables. Definitely a winter dish though!

Teriyaki salmon, with noodles and a few stir-fried veg. Always somehow better than I remember, and the kids like it too!

Baked salmon with Charlotte potatoes, fennel and fresh greens.
Chop potatoes and fennel, oven cook for 45 mins, place on top half side of salmon and pour on fish stock, back in oven for 35 mins. Fresh greens on side.

Stick it in the slow cooker and leave it. Goes well with mash, rice, jackets or sweet potato

Pizza, I use the Delia recipe with strong flour. I make two one with meat, salami etc the other with fish.
Never fails.

Delia Smith's pheasant in cream and apple sauce - but you can make it with guinea fowl or poussin or even chicken breasts at a push. Really easy and relatively quick but tastes lovely and 'sounds posh'

A tin of the finely chopped tomatoes- bit more expensive but worth it for some dishes. Heat with a crushed garlic clove, herbs, olive oil. Squirt of balsamic glaze. I cook it up for 20 mins.

Either serve on top of cous cous with roasted veg

Or

mix the Tom sauce with fusilli and serve with Parmesan and grilled garlic bread( sliced bread cut into triangles, drizzle with olive oil, toast on griddle with heavy pan on top to make it crisp. Once done I rub it with a raw garlic clove. YUM!
