I am always cooking the same things
I need inspo!!!

You can only pick one recipe and you have to love it!

Mine would be tomato risotto with basil and mozzarella.

This is cheap, healthy and everyone loves it. My DH hates lentils, hates fish and only tolerates chicken.

The fact that he (and my quite picky children) all love this says something. I think it is the combination of all spices and the heaps of almond butter. It is super creamy and really amazing.

@BookFiend4Life I make this with fresh from the garden tomatoes. It is my go to dish atm because there are so many tomatoes about.

I like the idea of deglazing the pan with wine. The way I make it, there is anything to scrape off the bottom. The evoo, butter and tomato juices make a sauce. I recommend putting the pasta into the sauce with tongs to make sure it is fully coated..

I make a simple veggie ramen that's amazing and really easy. Veg stock, miso paste, bit of dark soy, lots of chilli and garlic (I use the "lazy" jars for both so I guess there's a touch of vinegar from them too). Stir fry whatever veg you've got in, boil up some noodles, whack everything in a bowl and cover with the broth. Top with chopped spring onion and loads of fresh coriander. I could eat it every day!

Ooh @takealettermsjones that's brilliant. I'm always trying to get a god veggie ramen and never sure I've hit the best point. I'd still add hard boiled eggs and some light green leaves I think.

MadCattery thanks for the Nashville hot chicken recipe. I made it but used panko crumbs not cornflakes and fried it (not so healthy I know). It was delicious.

Onion and chorizo fried. Add thinly sliced chicken - cook , and then add red pesto, sriracha sauce and cream. Serve with pasta.

Love this thread! What fab ideas.

One of our faves is Delia Smith salmon with pesto crust. Basically mix up a paste of pesto and breadcrumbs, spread on salmon fillets, top with bit of sprinkled cheese and more breadcrumbs and bake high and fast. Delicious crunchy topping for salmon which the kids love. I use any cheese - normally just cheddar - and sometimes leave it out entirely. I keep breadcrumbs in the freezer just for this recipe! Serve with new potatoes and veg.

Love the look of the teriyaki salmon.

Mine is probably peri peri style chicken with potato wedges, and salad or greens or whatever vegetables we have.

A couple of weeks ago I was struggling to come up with dinner and realised a fantastic go-to is Cashew Chicken (I use a recipe fro Recipe Tin Eats). I’ve made it so many times I know exactly what ingredients I need and subconsciously whenever I go grocery shopping I check with myself whether I have them all specifically to make that dish. It’s always appreciated whenever I do it.

Sausage Tomato & Rocket Gnocci Bake from the Sainsbury’s website. Ready in about 20 mins and so easy to make. Depends. For a family get together, Tommy Myer's chili recipe. She uses a piece of beef cooked in the chili, then shredded with a fork when it's cooked.
For me and DH, risotto. For just me, omelette. Or fish finger butty.

Lentil bolognese.

Boil some red lentils for a few minutes and then add a big jar of Lloyd Grossman pasta sauce.

You could make your own tomato sauce if you can be bothered.

Serve with any pasta and loads of grated cheese on top.

This vegetable curry is so lovely and very easy, plenty of leftovers. I used Madras paste but any milder one would do if that's not to your taste
