What was on your dinner plate tonight?

We had an odd one of trying to use up what we have before payday + what is fresh on offer in Lidl.

It resulted in skin on oven fries, topped with a kind of mexican-spiced beef mince (almost like taco beef) and cheese, with Mexican street corn salad, homemade guacamole and some dipping tortillas.

We are currently creating a meal-planning spreadsheet and will be watching this thread in the hopes of stealing your meals!

M&S salmon and broccoli quiche, new potatoes, home made coleslaw, salad leaves, tomato and cucumber with some pomegranate molasses. Classic meal tonight.

I had some leftover country sausages that I’d frozen as meatballs, leftover roasted veg from the night before, some roasted tomatoes which had been leftover a while back that I’d blitzed and frozen, with a good dollop of red wine added to meatballs before the toms and veg, and served over pasta.

Tonight is chicken and mushrooms in a white wine and cream sauce that I’d made before the mushrooms and cream weren’t usable a couple of months ago and frozen a couple of portions. Probably over pasta, or rice.

Tomorrow is probably a Spanish omelette with the ends of the veg in the fridge (courgette, pepper), a small onion, handful frozen peas, handful cherry tomatoes, and fistful of string cheddar grated, maybe with some bacon lardons.

I am both on a “use up what’s in fridge and freezer” before I leave here for 2 weeks, and trying to save money.

What about tonight’s tea?
after a heavy Indian last night I’m fancying salad. So I’m going to roast a chicken, make a salad and some garlic and rosemary new potatoes! Ooo might even add some croutons

Roast chicken, air fryer roast potatoes, green salad. Tonight will be chicken pilaf with the remaining breast.

M&S chicken to feed 3 or 4 will have fed 5 by tonight and maybe another two or three , if I save the carcase to make soup.

Tonight it will be a jacket potato with tuna, grated cheese, mixed salad and olives.

It'll be chip shop chips tonight because we're going away tomorrow and I'm refusing to cook. I might throw in a fishcake and peas.

home made beef stroganoff with steamed jasmine rice. Made mostly from items already opened in the fridge, the beef was left over schnitzel pack of meat and I already had the mushrooms in the fridge.

I’m also using up what I have- did some smashed baby potatoes which I roasted with melted butter, evoo, salt and pepper- so crispy and delicious, served with grilled chicken breast (outdoor ninja smoker grill) and threw together a salad of left over veggies

Lol, the takeaway cancelled our order.. so, I had a tub of Tesco pesto pasta, cherry tomatoes, cubed Jarlsberg cheese & the outer of a pork pie! (Love the pastry, hate the pork!)

It was the viral crispy salad that was going around IG. I got it from Emily English IG page. She has lots of good recipes. This one is very quick and very tasty

Lasagne and chips with salad. All homemade, but ruined by my husband’s perpetual overuse of chilli, which has no place in a lasagne, and because none of the sauces were wet enough. A lasagne that fights back is not what was needed today. 🫤

I can't bring myself to cook much in this heat, so it's been ready cooked salmon or chicken and salad for weeks now, very occasionally with new potatoes. It's normally some kind of salad from a bag, cherry tomatoes, readymade coleslaw, olives or capers, maybe a bit of spring onion. Sometimes with a little cheddar or brie. Followed by strawberries and ice-cream, or tonight by Aldi's lemon meringue sorbet which is divine.
I'm feeling guilty on a number of levels, but I'm not standing over a stove when the temperature hasn't gone below 25 for a month.

Mushroom and red pepper quesadillas. DH fancied a steak, and by the time I'd sorted all the bits for that, and assembled the quesadillas, I'd almost gone off the idea and could only manage one. I had a bit of leftover quesadilla cold about an hour ago, and it was surprisingly good.

We had Bang Bang Chicken Salad.

Got the mandolin out and made matchsticks out of carrot and cucumber. Sliced thinly some sugar snap peas and spring onions.
Poached chicken breasts in mix of soy sauce, bone broth, garlic, ginger, star anise and 5 spice.

Shredded chicken.

Saved some of the strained poaching liquid and added it to sauce of peanut butter, sesame oil, soy, honey, rice wine vineger and garlic & ginger.

Delish!

We were meant to be going to the beach for a swim and fish and chips but it was too hot(!) so stayed at home and had cheese and biscuits with grapes and caramelised walnuts and a glass of Prosecco.

My husband and dd had sausage mash and onion gravy. Dd and ds had cheeseburgers and chips. I had tomato pasta salad and coleslaw
