We had an odd one of trying to use up what we have before payday + what is fresh on offer in Lidl.

It resulted in skin on oven fries, topped with a kind of mexican-spiced beef mince (almost like taco beef) and cheese, with Mexican street corn salad, homemade guacamole and some dipping tortillas.

We are currently creating a meal-planning spreadsheet and will be watching this thread in the hopes of stealing your meals!

Baked salmon, with soy sauce, sweet chilli sauce and sesame seeds. With a mixed salad and roasted sweet potato’s.

Two shredded wheat, milk. Didn’t fancy anything else really .

I made a rub for pork belly slices at lunchtime. Popped them in the fridge until needed. Twenty minutes in the air fryer. Asparagus spears again in the air fryer and some herby rice DH made. It was delicious.

Romaine lettuce, cucumber, red pepper, beetroot and rocket, plus some buttered new potatoes and a cold chicken thigh. Oh and some Ranch dressing.

I had Tesco’s Miso and Soy Asian salad kit, brioche bun and a couple slices ham. Here’s a pic - this isn’t the Asian salad but a Caesar salad but you get the idea!

Omelette made with eggs from our hens laid today, some mushrooms, ham and cheese

We had a bowl ( huge bowl, think pasta bowl size ) of hm Chicken broth , totally packed with veg , pearl barley, lentils, split peas, celery, carrots and leeks and a good handful of fresh parsley for lunch

Black Bean Burrito Bowl

Beans on toast, haven't had it for years, had Aldi beans and they are so good! Never buying Heinz again

Duck breast (reduced in supermarket), chestnut mushrooms and gravy. Slice of bread to mop up extra gravy.

It must have been a 'using stuff up' kind of day, because same here.

A packet of cheapo frozen chicken strips, slices of stale sourdough and some rocket, tomatoes, onion and cucumber with a packet of feta became...

Roast chicken and feta salad with a red wine vinegar dressing and garlic croutons

Chicken fried rice from the Chinese

We had homemade enchiladas but baked like a lasagne. Chicken, black beans sweetcorn in a tomato sauce, spicy cheese , tortillas etc. and a sauce which is half an avacado, sour cream, coriander, lime, cumin and salt blended. So delicious !

Courgette curry and naan bread. A lot nicer than it sounds!

We had an Indian tonight. I had chicken tikka biryani with veg curry and husband had Massala and rice with onion bhajis. Was delicious

Mix of veggie pasta leftovers with extra fried garlic mushrooms & broccoli. Chilli sauce for some extra Oomph.
Too many M&S chocolate covered popcorn (I admit to stealing a bag bought for DD - hopefully I’ll replace it before she notices!)

Ooh an absolute classic!

I love chicken stuffed and wrapped like this though I like to use Austrian smoked cheese sometimes and Lidl's Black Forest ham for the wrapper when Lidl get it in again.

The rest of the family had chipolas, mash and steamed broccoli and them some watermelon. I had left over roast veggies and cous cous with a spicy tamarind sauce poured over. Using up dished from an event I catered on Saturday. I had the last piece of strawberry pavlova for lunch!
