What was on your dinner plate tonight?

We had an odd one of trying to use up what we have before payday + what is fresh on offer in Lidl.

It resulted in skin on oven fries, topped with a kind of mexican-spiced beef mince (almost like taco beef) and cheese, with Mexican street corn salad, homemade guacamole and some dipping tortillas.

We are currently creating a meal-planning spreadsheet and will be watching this thread in the hopes of stealing your meals!

I was using up stuff so did a bolognese on homemade flatbreads topped with parm and cheddar.

made with lots of mozzarella
salad with it .
Cup of tea and home made chocolate hobnobs . I’ve started baking a bit more recently .

Salad (various leaves, courgettes, green beans, chilli and tomatoes with a tahini dressing) plus reheated leftovers from yesterday’s BBQ (veggie sausages, mushrooms and corn on the cob).
I don’t normally take pictures of my dinner but for some reason, took one tonight!

Gnocchi in a tomato and red pepper sauce with chorizo. I’m on holiday at the mo, so I made the sauce at lunchtime and let it cook on low for ages, then pan-fried the gnocchi to add in at night. It was really good actually - I added a bit of hot honey to cut through the acidity of the tomatoes and give a kick, plus a load of paprika.

DS asked for creamy cheese chicken. So I concocted a dish, topped with grated cheese and breadcrumbs and put it in the oven for 5 mins. There was an assortment of potatoes leftover. Peas and carrots too. DS approved.

DS made toad in the hole last night, it was the best toad in the hole I've ever had! He made cheesy mash too (I'm sensing a theme...).

3 bean chilli - obsessed with the MOB app, so good for meal ideas, prepping ahead and outputting shopping lists. We use it every week now and haven’t had a bad meal yet!

Nothing. Because at 18.00hrs I ate a bowl of peanuts. So when it came to dinner I was not hungry. Ashamed to admit to it, because I am supposed to be trying to be healthy.
