What was on your dinner plate tonight?

We had an odd one of trying to use up what we have before payday + what is fresh on offer in Lidl.

It resulted in skin on oven fries, topped with a kind of mexican-spiced beef mince (almost like taco beef) and cheese, with Mexican street corn salad, homemade guacamole and some dipping tortillas.

We are currently creating a meal-planning spreadsheet and will be watching this thread in the hopes of stealing your meals!

Chick peas, aubergine, courgette, yellow pepper, red onion and mushrooms, roasted with chopped halloumi and tinned cherry tomatoes, basil oil, balsamic vinegar, mixed herbs and mixed seeds. Absolutely delicious, one portion eaten and two portions to freeze.

We had baked sweet potato served with fried sweet peppers, roasted courgette and red onion. With a dollop of creme fraiche and salsa verde and a bit of lime juice. Very tasty!

We are eating up the fridge/freezer before holiday later this week. I had fish fingers, DS1 had burger, DS2 had steak, DH had macaroni cheese bakes. We all had roasted new potatoes, spring greens and broccoli.

so vegetable casserole lots of Pearl barley and new potatoes with carrots, celery, peppers, courgette. Was very tasty.

will have that as leftovers for lunch tomorrow with bread rolls. And then pasta, veggies, garlic bread and tomato sauce tomorrow night.

Left over spaghetti bolognese with pasta made by DH plus a watermelon, mint and halloumi salad , and some cherries which were on the cusp.

We had crispy halloumi tacos, meant to be with homemade guac but our youngest couldn’t wait! I was pleasantly surprised by the 1.5 yo chowing down on the halloumi and would have it again.

Chicken thigh (skin on) traybake with red onion, whole garlic cloves, new potatoes, rosemary (from the garden), lemon wedges, salt, pepper and olive oil. Put a tablespoon of water in the dish and oven roast at 180 fan until the potatoes are brown and soft and the chicken is crispy and cooked. Steamed broccoli as a veg. Easy and delicious - like oven baked chicken and chips (but healthy). Served with Stokes tomato ketchup. It was yummy and one of my favourite traybakes.

slow cooker pot roasted beef, carrots, celery, onions, spuds, dumplings, gravy and steamed cabbage. It was more chilly of late yesterday and I had a beef joint taking up freezer space - hence the unseasonable dish. Bloody delicious though!

I had Tesco’s Miso and Soy Asian salad kit, brioche bun and a couple slices ham. Here’s a pic - this isn’t the Asian salad but a Caesar salad but you get the idea!

We had that Asian salad the other day and loved it! Will have it again tonight!

Beans on toast, haven't had it for years, had Aldi beans and they are so good! Never buying Heinz again

In a blind test, Aldi and Lidl beat Heinz by a lot for baked beans.

I had a spicy beef mince slow cooker thing batch cooked at the weekend with a steamfresh tender greens bag which I think was broccoli, green beans and peas.
