What did you eat today?

A few months ago there was a really fun series of threads where people listed what they’d eaten that day (and had a general chat).

I really enjoyed it but can’t find it anymore so I thought I’d start one.

It was really interesting and varied (it’s not a weight loss or judgy thread- unless the judgement is ‘that sounds delicious, what’s the recipe/where did you buy it?’). Everyone is welcome!

Today I’ve had:
Breakfast- Scrambled eggs, sautéed veg (tomatoes, red onion, spinach, mushrooms). And tea with milk.

Snack- Americano with milk

Lunch- Chicken salad (chicken breast, cucumber, tomato, lettuce, avocado, sesame dressing).
Followed by low fat Greek yoghurt with peanut butter, strawberries, nectarine and blueberries.

Dinner- Will be roasted salmon, homemade potato wedges, roasted courgette/tomato/onion/fennel.
Followed by a watermelon and lime ice lolly (I make my own so it’s just fruit).

I’ve just started weight watchers so it’s not the most exciting day (I’ve also tried to cut out UPFs as much as possible and use my points on high fat whole foods like avocado and nuts). I’m looking forward to living vicariously through other people’s treats!

Cajun salmon chunks, sticky rice, avocado, cucumber

chicken curry (just realised had chicken curry last night at a catered event - whoops!) with lots of added veg, rice, naan, poppadum.

Breakfast was overnight oats with GY, walnuts, and strawberries again.

Lunch was a chicken and salad wrap with lemony yoghurt dressing and some squares of 85% chocolate.

Lots of squash and a cup of tea, no sugar one chocolate digestive.

Dinner is veg & black bean soup with the left over chicken added and I've made some peanut butter stuffed dates covered in the last bit of my dark choc 😋

B: 2 crumpets with peanut butter, a banana, tea, milky coffee.

L: Picnic from home: Cheese & spring onion roll, an apple, strawberry Muller yoghurt, double decker choc bar, salt & vinegar twirl crisps, tea.

D: Homemade roasted peppers & red onion pasta, 2 pieces garlic flatbread.

Dd:

B: Mini roll & vanilla Muller yogurt.

L: Party Ring biscuits, Salt & vinegar twirls, Ambrosia custard pot (didn’t eat cheese roll
or apple). Water.

D: 4 slices cheese & tomato pizza, baked beans.

try again for fruit and veg tomorrow, but if we have kebab I have all of the salad though, so that will be fine.

Yes? I freeze leftover takeaways of all kinds, chip shop chips freeze brilliantly. I freeze slices of takeaway pizza in twos for ease. Reheat it in the air fryer gently.

So far today;

2 cups of milky coffee.
2 scrambled eggs on one slice of sourdough toast with mashed avocado and butter.

Lots of water.

Will have lefty over Grilled chicken kebab for late lunch/dinner, probably with a salad.

I had my "lazy" egg mayonnaise + home made cheesy soda bread and kerrygold butter. Followed by greek yogurt and berries + drop of vanilla extract. Full now.

BTW the lazy eggs are three eggs cracked into a warm pan stir with spatula or chopstick until scrambled to the consistency you like, (mine is on the denser side for the egg mayo), let it cool (I often make the night before or in the morning) in the fridge and add your mayo mix, I use garlic mayo, ordinary mayo, parsley and onion powder. Mix it up then spread on the bread or just eat if off a spoon So easy and very tasty.

No boiling eggs, cracking and peeling the shells, mashing etc. But I'm lazy!

I’m not a big egg person, but I’ve always wondered why people bothered boiling and peeling eggs instead of doing thst! I guess the waiting to cool isn’t much different. I love garlic mayo, really good roast chicken sandwich with a sprinkle of sea salt. Epic.

My absolute favourite lunch is an egg mayo sandwich with Baxter's tomato soup. Instant cure for a bad day.

B: ( courtesy of Travel Lodge) bagel, butter and jam, mango yoghurt, latte, two hash browns, beans, mushrooms.
L: beetroot and feta salad from Waitrose, half latte
Cup of decaf instant coffee
Tea: not sure yet. It's been a very good heavy week and I'm not really peckish or fancying anything.

Breakfast was GY mixed with vanilla protein powder and a cup of diced peaches, cup of tea with almond milk.

Lunch was one slice of super loaf toast, butter with a slice of medium cheese on top... plus another slice whilst waiting for the bread to brown.

Lots of lemon squash and another tea.

Dinner is macaroni cheese made with a veggie based sauce, bacon and broccoli.

Made a choclate banana cake for the kids and might have a slice myself for afters.
