What did you eat today?

A few months ago there was a really fun series of threads where people listed what they’d eaten that day (and had a general chat).

I really enjoyed it but can’t find it anymore so I thought I’d start one.

It was really interesting and varied (it’s not a weight loss or judgy thread- unless the judgement is ‘that sounds delicious, what’s the recipe/where did you buy it?’). Everyone is welcome!

Today I’ve had:
Breakfast- Scrambled eggs, sautéed veg (tomatoes, red onion, spinach, mushrooms). And tea with milk.

Snack- Americano with milk

Lunch- Chicken salad (chicken breast, cucumber, tomato, lettuce, avocado, sesame dressing).
Followed by low fat Greek yoghurt with peanut butter, strawberries, nectarine and blueberries.

Dinner- Will be roasted salmon, homemade potato wedges, roasted courgette/tomato/onion/fennel.
Followed by a watermelon and lime ice lolly (I make my own so it’s just fruit).

I’ve just started weight watchers so it’s not the most exciting day (I’ve also tried to cut out UPFs as much as possible and use my points on high fat whole foods like avocado and nuts). I’m looking forward to living vicariously through other people’s treats!

@AuldTheDeepMinded you can freeze the cake in slices wrapped in parchment paper if you want to give yourself a break. I think I’d like recipe too, please! Courgette/zucchini and lemon cake sounds very summery.

It's just a normal all in one sponge mixture with a grated medium courgette added plus lemon rind finely grated in. Baked in two sandwich tins. When cool, sandwich together with lemon curd. Drizzle with icing made of the lemon juice and icing sugar. It is delicious!

Bread, butter and redcurrant jam for breakfast

No idea what lunch will be but dinner is the same soup as yesterday, sausages and maybe garlic naan. Yoghurt and blackberries.

L: leftover curry and rice, Greek yogurt with blueberries
S: 2 dates, a pear
D: will just have egg on toast tonight followed by a square of dark chocolate
All washed down by several cups of tea.

Yesterday I ended up having a big full English all day breakfast with chips and then a pineapple ice cream. Bloody marvellous.

Today-

Porridge with peanut butter and chia seeds

Lunch- veg soup, bread, maybe some cheddar, a banana

Dinner - chicken thighs, new potatoes, salad, blackberries, cream.

Didn't have time for soup at lunch so had a tin of eel in spicy sauce, some tomatoes, slice of bread, a banana.

Dinner is now soup with chicken thighs and new potatoes cooked in it, some oatcakes and redcurrant jam.

Greek yogurt, aldi, yuk, back to fage it is.
Chicken and coconut ramen, salad, cherries, half a protein pudding, loads of tea.

Small bowl winter salad
Handful cashews and almonds

Oj x 1
Pasta with smoked salmon, courgette, garlic, cream and cheese sauce
2 x home made sourdough garlic bread slices

Am now replete. It's been a hungry day

Today I'm de-hoarding a house (not mine) and I'm knackered already. Breakfast was porridge and peanut butter and a banana.

Lunch- cheese and salami sandwich, cheese and onion crisps, and an orange.

No idea what dinner will be yet!

Breakfast: porridge and brown sugar

Lunch: ham, Swiss cheese and salad sandwich. 2 hard boiled eggs. Cottage cheese and blueberries.

Dinner: asian salmon, noodles, broccoli, asparagus. Cherries.

Small glass red wine.

Lots of coffee, water and a diet pepsi.
