Oh those pancakes look delicious! Dc2 and I made some cinnamon swirls yesterday, only opening one of those chilled packets and we had to assemble them but they are dairy free so dc1 could join in. Makes us all happy!
Today I've braved a shopping centre with dc2, new trousers were purchased and also some browsing for birthday gifts, I keep asking them to make a list but now I have photos of things they like. Result.
I've had a wardrobe clearout, despite losing 2 stone, at least half of my clothes remain what might be described as "aspirational sizing".
Finally, I've ordered a spider hoover, due on Weds - cannot wait for that delivery.

If anyone is interested, I've made the recipe using soymilk in lieu of milk and I've also omitted the fat (by mistake). I also usually use melted butter instead of oil. All versions have worked. ☺️
I think the trick is the vinegar/soda reaction to make them fluffy. The batter is thick; don't try and over beat or the magic bubbles will diminish .

Recipe easily divides into 3rds
You might need to convert measurements, though.
I sift dry ingredients (habit);
whisk wet then pour into dry and stir until well combined, but don't beat.

370f pan and I use butter for the lovely Maillard reaction and flavour. I'm a bit precise, so I wipe pan between batches with paper towel. As mentioned, I use melted butter (lactose free, actually) in place of oil.
If pan is well heated there shouldn't be a throw away first pancake. Batter should be thick. My spoon drops a scant 1/4 c batter.
I should add, although written in imperial, I divide sugar and wet ingredients in metric. 🤣🤷‍♀️

@WinterFrog not drop scones but quite similar . I make both drop scones and American pancakes. Unfortunately though the kids love my pancakes DH (by now definitely the chef of the household) is polite but lukewarm about them, so I am always interested in upping my game.

I actually prefer drop scones normally (less cakey) but this view is not shared by my family!

I forgot to think of a project. The day is already busy but I shall squueze one in. Theres a good thread about keeping a house smelling fresh so..... I think I shall start by cleaning the outside and under my cooker. But mainly I must put stuff away after a fairly chaotic weekend.

Good morning all! I am feeling unsually-for-Monday jolly as we had a very nice weekend with playdates and long lazy lunches at friends' houses and it gave me a nice warm fuzzy feeling inside. I feel so grateful at how lucky we've been with D's schoolmates and their parents - made some good friendships already, among the parents I mean, and it is such a joy.

Today's main jobs are to cook dinner while H is responsible for the school run, and doing the pre-cleaner house tidy 😅Tomorrow I am going to London for the day to meet up with my ex-colleagues and I know that somewhere around my study are two books I accidentally took back with me when I cleared out my office there two years ago (ahem) so I need to hunt them down and return them!! So that's another task!

Is it Monday already? Where did the weekend go? - it's been quite the day already for grumpy work people. The weather is so rotten even SpiritDoggo was hiding when she was being coaxed out for a walk.
Today is all light tasks:

  • bag up the clothes that belong in the bin
  • clear the dishes from my room - I am living like a teenager 😄(and I am many years beyond that)
  • book a restaurant for Niece's birthday this week,
  • make sure I have enough clean gym kit for this week's training
  • find a book to read tonight, or find something rubbish on TV
  • look and see if I have pancake ingredients 😄
  • the pouring rain has highlighted we need our front gutters clearing - must find someone
That's all for now - managed to find the number for the guys who replaced our back gutters so fingers crossed, SoE

I spent yesterday doing some of the sorting for out new units. I’m a tad fussy about how things look and I’m sure I will rearrange a few times before I’m happy but is getting there. The display section anyway. The bottom section is done.

Was back at the dentist this morning for a consultation and will be there tomorrow for another consultation. And on and on!

Trying to decide what to get done this afternoon. Continue sorting or tackle the ironing. Decisions decisions!

I got quite far with my batch cooking and am pleased with myself. I made a creamy sausage and sage ragu ; a beef stew; a creamy chicken and leek casserole and a chicken and passata sauce which I can add marscapone to or chilli flakes depending on how we feel. So a good 9 freezer meals worth which I am pleased with. I'll serve them all with rice or pasta or mashed potatos and vegetables.

I must do some batch cooking like that. DH does most of the cooking here but as DS is still here too and doesn’t eat everything we eat sometimes two different meals are cooked. It would be useful to have more things we can just pull out of the freezer. DS would only eat the chicken and passata dish on your list it think. Maybe the sausage one.

Good morning all. Gorgeous fall day here. 😎☀️🍃🍂🍁
Dishwasher is on, laundry is on, I've folded a bunch and put away and I've had to take clothes hanging outside into the dryer. Clothes just won't dry outside now...😔
Plans: two more loads laundry if I can find space to hang it all, otherwise will do one more; clean bathroom and get dc out asap for play. Thinking Science World first as yearly pass expires this week. 🤞

Dc2 has swimming tonight, then Bake Off starts so I'm putting a reserved sign on the sofa and hiding the remote.
Today I've picked what I think is my last posy of sweet peas. I love them and dh has had way more sucess than I ever had.
We've made decisions on new fires so it's all systems go, next I need to find a plasterer.

Morning all 👋 I'm alive! Just snotty and tired now.
I have watered my indoor plants. Arranged to have a window handle replaced. Cancelled a hair appointment as don't want to share the germs. Booked a Christmas outing for littlest. Sent an email to update some of my mother's friends. Drunk copious amounts of lemsip 🤮 Used sofa as base yesterday and re read an old childhood favourite (Talking of Horses by Monica Dickens) And watched the new All Creatures Great And Small.

Impressed at everyone else's activity and pleased to have achieved something!

@Mumtobabyhavoc you always sound super accomplished to me with all you get done with two little ones!

I have been chipping away at little jobs. The shower plug in my shower. The rim of the plug hole in my bathroom sink gets black and yucky so I gave that a scrub the other night with the old head of my toothbrush as I was putting on a new one. Started dusting the cabinet doors in the kitchen - I’ll do a few every day.

DS’s wardrobes finally got the handles put on so he can now use all the drawers and he voluntarily reorganised his clothes and put stuff away. Also cleared his desk. And brought down all the rubbish.

Today:

  • usual kitchen/dishwasher sort out
  • clear off dining table - it’s got lots of ornaments etc on from sorting the new units
  • clear off top of sideboard
  • book chiropractor appointment
  • book eyebrow tint as they are almost invisible now
  • book hair cut
  • Book hotel in Dublin for DS’s graduation
  • book flights
  • strip bed
  • general pre cleaner tidy round
  • message carpenter about living room

Maybe I’ll also do some ironing.

Well it's made me feel one of the gang, @Peridot1 Thank you for the caring (you rotter 😂) How is your back?

I'm feeling better enough to want to do things but run out of steam the minute I try. Another day on the sofa I guess. I love not having to fret about any phoning in sick though. I think we all know when we don't feel well enough to work, and it's all kinds of wrong to have to convince a line manager. In my most recent line of work they'd edge people out by not giving them enough calls to make a living, if for whatever reason your face didn't fit. Doing some piece work now, and feel much more in control.

I can't visit my mother, obviously, and normally I'd phone or send her WhatsApp messages, but she can't manage her phone now 😔 I'm relying on other people to send love etc.

Today i am mostly grateful for dolmio, as the minced beef in the freezer needs using today, and DH is injured so I don't want him to cook today.

  • sort out paints and get rid of the crusty ones 😄
  • be ready to leave for refpilates class at 5:45
  • nip to post office to finally send off boots for re-soling

OOh so impressed with all the batch cooking @WinterLobelia ! On Monday I got my H to make lots of shepherds pie and we put some aside in the freezer, that was very pleasing. Good day was had in London yesterday but v long, left in the morning after school run and got home at 8pm. Was reminded that I am VERY grateful this is no longer my normal commute (I worked there for almost ten years. it was exhausting).

@WinterFrog , look after yourself and hopefully you'll be able to see your mum again soon 💜

I am listening in to a meeting, but when it finishes I need to call my health insurer - this will be my 'special' task for the day.

Oh, also, I have been following this thread and getting a lot of good ideas from it

Single, if I make Shepherd's pie I always put it in a pie crust (just a single) to bake. I just have to have a crust. 😋

SoE & Katie, you've reminded me I need to get into the garden, cut it back/dig up and compost and generally make it fall/winter ready.

Got Havoc to pre-school for just over an hour this morning then off to gymnastics. Spoke to my mum's surgeon on the drive home and he recommends further surgery to prevent recurring problems, so will arrange. Havoc had a very late nap, crashed, actually, at 5pm and woke at 6:30. So, it was a late trip to Costco, then a bit of an easy dinner with rotisserie chicken and a fruit platter, did baths etc. Managed vacuuming then washed floors with the steam mop, still had vinegar water in it, so cleaned baseboards and bathroom walls. Made a pot of chicken stock with the chicken carcass and a handful of cheery tomatoes and now have two containers in the fridge. Planning on roasting the butternut squash I bought then blending with stock and cream for lunch/dinner tomorrow and freeze the other. Also bought a new bathroom mat and mat for entrance at door. Steamed and vacuumed the entrance mat. New bath mat to be washed tomorrow.
Neighbour was a bit loud a short while ago (windows still open as still warm). Looked like guests and trouble parking car and a barking dog. Obv I am still awake, but, it was after 11:30pm. If dc had awoken I'd have been 🤬 because they both were overtired and got to sleep late. Anyway, I should put the phone away and get to sleep, too.

eta and I made a delicious banana bread with walnuts, dark choc chips and a touch of almond essence instead of vanilla!!!😋😋😋
