For us I found white asparagus in Tesco so we are having white asparagus, nice ham, boiled eggs, hollandaise. DCs are also having chicken drumsticks and veg sticks.

@whitecompany do you have any simple recipes or recommendations for cooking fish, please? I see lots of nice looking fish at the Morrisons counter but never buy as I'm clueless what to do with them.

I mean, salmon, sea bass and tuna I can cook but what about the rest of them? Don't like cod but would love to try mackerel, sardines, sea bream, etc.

So many lovely meals here. And such inspiration!

I am being boring and lazy tonight- shoving a broccoli and spinach quiche in the oven and having with baguette and a salad made from green lentils and whatever raw veg we have plus some halloumi. DCs having quiche lorraine.

Tonight's was much more of a success and a favourite we have often.
Crispy tofu with teriyaki sauce, a crispy chilli oil cucumber salad and some veggie gyozas and rice on the side.

Tonight is chicken ramen ala Tired.

Which basically means chicken flavoured instant noodles with broccoli, asparagus,. sliced poached chicken, grated carrot, peas and sweetcorn with a fried egg on the top.

At least the DCs eat it.

I'm making a quiche with salad things because I still have a ready rolled shortcrust pastry in the fridge from when I thought I'd be making several rounds of coronation quiche - but just one was plenty.

Nothing fancy tonight, sausages, egg, chips and beans . Going to pick up some nice crusty tiger bread for mopping it all up.
I can't be bothered with anything else I'm too tired.

I'll do something balanced and healthy tomorrow.

Frozen rice and veg, egg fried with frozen bacon bits. With hot sauce and soy sauce.

Bit odd but I'm trying to empty the freezer to defrost it! Was actually very nice haha.

Shepherds pie.

It was prepared yesterday but as I was about to put it in the oven, DH rang and said he was thinking of getting chinese. So we had the chinese yesterday and shepherds pie is in the oven now for today.

Have just ordered 2 of the Roasting Tin cookbooks off the back of this thread. Have had a phase of 'substantial salads' which has been fun but this stubbornly dreary weather is pushing me back towards hot food.

I made a huge pot of chilli con carne this morning and it's been cooking all day, lots of veg and beans in it along with the meat. We will have some with rice tonight and the rest will be portioned up and put in the freezer.
Cheap and cheerful!

Our ramen went down very well.

I have delighted the Dcs as well with a pudding of scotch pancakes, tinned peachers and ice cream.
