For us I found white asparagus in Tesco so we are having white asparagus, nice ham, boiled eggs, hollandaise. DCs are also having chicken drumsticks and veg sticks.

Everyone else had sausages, I had stuffed peppers. Sweet potato fries, random assortment of veg that needed using up, garlic flatbread for those who don't like sweet potato. All ready-made, Monday dinners are low effort for us.

We had jacket potatoes with tuna, grated cheese and homemade coleslaw, and a really nice salad. I enjoyed it very much!

Whole cooked chicken, cubed mini roast potatoes, baby corn, green beans and carrots with chicken gravy.

We had roast chicken, rosti and peas with gravy, and DD2 and I made crumble to take her mind off her currently ongoing SATS. So now we are all in a crumble and custard induced food coma.

Bit of a splurge this evening. Martinis with oysters (bargain at the fish market), then will do ribeye with asparagus, walnut, and Stilton salad.

Its basically this recipe but I alternate between cumin, ras el hanout and garam masala, depending on what I have run out of. Super east and always on our weekly rotation.

I've been feeling low and i took a nap after work. I woke to the house smelling delicious. My dh made a healthy veg curry with roasted veg. It was so good and now the house smells wonderful. It's like when i was a kid and mum would make a stew of we were ill, I just feel cared for from such a simple thing.

We had a spiced roasted chicken, spicy rice, flatbreads, tzatziki (which we made for yesterday’s dinner and had leftovers off which prompted the whole meal 😂) and a lovely dressed avocado, tomato and rocket salad.

I haven't read the whole thread but interesting most are meat/chicken and fish are just fish fingers or fish and chips. Obviously I've probably missed vegetarian or vegan dishes etc.

We like to eat lots of fish - so one day we might have grilled sardines or steamed sea bass with lots of ginger, or salmon and lemon wrapped in foil.

@whitecompany id love to bring more fish into our diet but it’s quite expensive and until recently mince & chicken more affordable. I still try and eat fish but it’s more likely to be a treat/more special meal on a weekend than a normal Monday night.

Quick kedgeree for dinner tonight, with tenderstem broccolli on the side (not traditional but DS' favourite veg at the moment so I'm going to encourage it!)
DS had gymnastics this afternoon and is always hungry after, so spicy/curried rice with haddock, soft boiled eggs, peas mixed in, with tenderstem and mini naans on the side, did the trick.

On the subject of fish being so expensive, I used to buy the reduced fish fillets, whole fish etc from Tesco fish counter and freeze (that's where tonight's smoked undyed haddock came from) , but they've just shut down the fish counter permanently at our local branch!
