What would you cook for dinner....if it was just you?

I've just cooked sausages, little herby roast potatoes, various veg that each child likes, gravy out of the freezer.

At least an hour to do it all.

It's supposed to be the one meal that everyone likes but today the kids chipolatas 'taste funny' because they were from tesco not Aldi and no one seemed to really appreciate it.

I just started thinking...if it was just me here in my own I'd be happy with soup and a sandwich

What would you or do you cook if it was just you eating?

I made tofu stir fry for myself the other night. I also like to make proper bubbling macaroni cheese as no one else here appreciates it. Cheese toastie and tomato soup is always a winner as well

Spaghetti puttanesca. Tomato and garlic based sauce, with lots of olives and capers and LOTS of chilli which my husband isn’t keen on. Mmmmm.

No one else here likes seafood unfortunately.

Scrambled eggs, toast and beans or avocado. I cook loads of meals, meal prep my lunches, love cooking new things and generally eat loads of veg but if it’s just me this is all I want/cba to make.

Since dd1 left and it’s not just me and dd2 we often have crap dinners because I just can’t be bothered to cook a big meal for both of us, dd2 often has a cooked meal at college. Tonight I was really lazy and we had super noodles 😬, I often have soup and a roll or eggs on toast.

I came on to say the exact same thing!

I love seafood and mussels and scallops are my favorite but I am the only one that does.

Yes. To all of you! Either something out of the ordinary (with lots of garlic) that no one else likes or soup and sandwich. And cheese. Lots of cheese

I am in alone tonight and I did just have soup and a sandwich... usually when I'm alone it's that or a microwave dinner, or a toastie.

I miss DH when he goes out for work etc which he has to a lot, and when the kids are at their other respective parents, but I don't miss cooking 5 dinners for everyone at once due to our picky eaters.

Omelette usually or I order a takeaway, if super organised I buy scallops as dp is allergic. It's pretty rare to be cooking for just me!

I cook my dinner every evening, but then I live on my own and only have myself to please. My late DH did all the cooking, and I've carried on, partly as habit and six years later I enjoy it.

I could well imagine cooking for others every day would turn me to the soup and sandwich in a nano second.

I did a baked Camembert once, but it was too big for one.

Well I live on my own so it’s every night for me 😂 I usually eat the same thing for 2 nights in a row.

Gnocchi and pesto
Baked potato, beans and cheese
Veggie fajita/enchilada
Bean enchilada
Halloumi tray bake
Halloumi wrap, fake chicken goujon wrap
Salmon and veg in the airfryer
Stir fry (sometimes with salmon)
Veg curry and rice
Veggie burgers and chips
Ready meal 😅

I used to do Hello Fresh and just signed up for Gousto. It’s easy to get lazy when you’re on your own!
