What would you cook for dinner....if it was just you?

I've just cooked sausages, little herby roast potatoes, various veg that each child likes, gravy out of the freezer.

At least an hour to do it all.

It's supposed to be the one meal that everyone likes but today the kids chipolatas 'taste funny' because they were from tesco not Aldi and no one seemed to really appreciate it.

I just started thinking...if it was just me here in my own I'd be happy with soup and a sandwich

What would you or do you cook if it was just you eating?

These days it’s never just me. I would take the opportunity not to have to try and feed DC healthy food and would have something completely veg free like cheese on toast.
Ironically, when I was regularly feeding just myself, it was mostly vegetables or salads (as I do actually like them!).

Eggs. Either soft boiled with soldiers, poached on toast, or fried with chips.

A cheese board of some description. It's my favourite thing to eat but Dh is gluten free and vegan due to allergies so it's not something I get to have other than at Christmas. I could have one any time but it would mean either me or him making something different for him to eat so I generally don't bother

Would NEVER cook if it's just me...I see this as the ultimate in "self-care" as I seem to have been responsible for the sourcing/planning & provision of all meals for all people for several decadesGrin Always enjoyed the "entertaining" bit - lighting candles, fresh flowers & some fancier dinners/brunches - but the daily grind. Nope
So i'll either have a bit of pineapple cottage cheese/muesli/fresh mango or take-out if alone

I much prefer cooking just for myself. I quite enjoy cooking but absolutely hate the bore of compromising and finding something we both like (only DH & myself at home now). I am ridiculously excited now that the Rugby Six Nations is on and I will get a few evenings to myself when DH is out watching the game with his mates and I can plan and choose exactly what I want! The other night I did a full roast chicken meal just for myself ... another time I might buy an upmarket pizza.

Asian style vegetables and tofu stir fry, with glass noodles. Takes minutes to prepare.
Omelette with feta, jalapeños and a salad.

That’s what I had so far this week.
Tonight I have no idea, but I have some Greek frozen pastries from Lidl and salad that need to be eaten, I might do that.

I’m off tomorrow, I’m making soup and fresh bread and a lemon drizzle cake.

I was thinking (with lovely anticipation) about this last night in taxi from airport - I had planned to fry mushrooms and garlic with some thyme in butter, add a dollop of cream and a very good grind of black pepper, and depending what was there, serve it on brown granary toast or pasta.

I arrived in and DH had kept me 3 large beef and chorizo meatballs in a bland tomato sauce and some pasta, to reheat. (Meatballs I had planned for a hot dinner for us both tonight when I was going to be late home from a conference).

Instead, I get chicken and turkey curry (sauce from a jar) and rice, which Dh has already cooked and is eating when I am only just started my journey home.

The other thing I love to do just me is either chicken thighs (still with skin and bone) or lambs shank roasted in oven with baby potatoes and a courgette dish on side (I slice courgettes lengthways, place in ovenproof dish, sprinkle with lemon juice and salt, then cover with breadcrumbs tossed in melted butter and grated Parmesan). Or else roasted chunks of peppers, onions, mushrooms, cherry tomatoes and a dash of balsamic vinegar as my veg (I sometimes prep a massive bag and freeze to just throw in the oven as needed).

Sorry you didn't get your meal but you gave me the idea for dinner (the mushrooms)

I have crackers with vintage cheddar and very ripe tomatoes with garlic salt and heaps of cracked pepper.
Amazing with a glass of wine.
Not arsed cooking just for myself.

I like chicken livers and button mushrooms in a creamy bacon and white wine sauce on some nice seedy toast.
Absolutely no one else in this house would touch that with a barge pole so it's my go to when ita just me.

Second half of the corned beef hash was gorgeous. Must make it again soon.

The rest of the house seem to think I'm eating cat sick or something. I can't convince any of them to try it.

I NEVER get to cook and eat a meal for myself. I have two picky children, one of whom is a vegetarian who only likes about three types of veg, and the other who appears to only like the food she doesn’t. Most of the time we end up with something like pasta with a homemade pasta sauce - passata, garlic, herbs, and maybe some chickpeas or lentils and I can’t be bothered making something separate. Left to my own devices I would make a medium rare rib eyed steak, roasted cherry tomatoes on the vine, sautéed mushrooms, and one of those part baked baguettes (baked) with lots of butter, salt and pepper. Only another 4 years to go!

Depends on how bothered I felt to cook. I could eat something that I love but nobody else in the family would eat: steak Diane with mushrooms or, alternatively, some kind of fish dish. If I was feeling lazy I would make my comfort food: creamy porridge with jam, chia seeds and crunchy peanut butter.
