What would you cook for dinner....if it was just you?

I've just cooked sausages, little herby roast potatoes, various veg that each child likes, gravy out of the freezer.

At least an hour to do it all.

It's supposed to be the one meal that everyone likes but today the kids chipolatas 'taste funny' because they were from tesco not Aldi and no one seemed to really appreciate it.

I just started thinking...if it was just me here in my own I'd be happy with soup and a sandwich

What would you or do you cook if it was just you eating?

Risotto with all the veg I can find from the bottom of my fridge and a bit of protein from the freezer, finished off with plenty of parmesan

I usually cook myself a pizza from the freezer when I am on my own, requires such little effort 🙈

I was thinking (with lovely anticipation) about this last night in taxi from airport - I had planned to fry mushrooms and garlic with some thyme in butter, add a dollop of cream and a very good grind of black pepper, and depending what was there, serve it on brown granary toast or pasta.

I arrived in and DH had kept me 3 large beef and chorizo meatballs in a bland tomato sauce and some pasta, to reheat. (Meatballs I had planned for a hot dinner for us both tonight when I was going to be late home from a conference).

Instead, I get chicken and turkey curry (sauce from a jar) and rice, which Dh has already cooked and is eating when I am only just started my journey home.

The other thing I love to do just me is either chicken thighs (still with skin and bone) or lambs shank roasted in oven with baby potatoes and a courgette dish on side (I slice courgettes lengthways, place in ovenproof dish, sprinkle with lemon juice and salt, then cover with breadcrumbs tossed in melted butter and grated Parmesan). Or else roasted chunks of peppers, onions, mushrooms, cherry tomatoes and a dash of balsamic vinegar as my veg (I sometimes prep a massive bag and freeze to just throw in the oven as needed).

I make a delicious concoction of tinned sweetcorn (a big tin) in cheese sauce. Proper bechamel with tons of mature cheddar, chilli flakes, mixed herbs, Worcestershire sauce and garlic. My DH says it's revolting, so I save it for when I'm dining solo.

Possibly mushroom risotto if I could be bothered, but if not I'd either have guacamole on toast, or a big bag of Monster Munch and a bar of chocolate. And a glass of wine, for the vitamins 🍷

Or when DH spent a lot of time away and DD was too young, after her bedtime I'd throw an M&S Welsh rarebit into the oven with a part baked baguette to then dunk in cheesy goodness (maybe with a glass of wine) for my dinner. Then Dd caught me and wanted to share, then Dh cottoned onto it, so now I need to do 3 if I do it at all.

It's always just me 🙂but it depends on mood and appetite.

So I can please myself; sometimes I cook and sometimes I don't.

A salad with a delicious (to me) simple vinaigrette I make and garlic bread or tomato soup with garlic bread. My guys like big meat based meals so I enjoy having occasional night to not cook.

I just made myself corned beef hash with mint carrots and gravy. It was delicious.

Really couldn't be bothered when I got in, but saw that I had some onions and potatoes that needed using and a tin of corned beef and the rest was history.

Now to clean up...

Im starting to think I should cook for just me more often - I can think of lots of things Id like to eat if I didnt have to worry about what everyone else wants/likes

I live on my own and mostly cook every evening. When I can't be bothered I have a large bowl of porridge with fresh fruit in it.

I just had tom yum soup with rice noodles and tofu. Cook tofu whilst making the broth.

Pasta all'arrabiata with steamed lemon broccoli. I'd have that every day I could be bothered to cook. Most nights I'd be happy with muesli!
