What would you cook for dinner....if it was just you?

I've just cooked sausages, little herby roast potatoes, various veg that each child likes, gravy out of the freezer.

At least an hour to do it all.

It's supposed to be the one meal that everyone likes but today the kids chipolatas 'taste funny' because they were from tesco not Aldi and no one seemed to really appreciate it.

I just started thinking...if it was just me here in my own I'd be happy with soup and a sandwich

What would you or do you cook if it was just you eating?

Some scrambled egg or beans on toast
A bagel
A baked potato
A chicken wrap
Or something that can just be chucked in the air fryer like those mini pizzas

Before DD my DH worked away Monday-Friday and I hated cooking for just myself so I'd live on fruit and crisps most nights 😅 or I'd end up at mums

Scottish mussels, scallops in a white wine, garlic creamy sauce, stick match frites, some buttered asparagus and a glass of Oyster Bay.

No one else here likes seafood unfortunately.

Mmmmmmmm

Well I've just batch cooked a lasagne, Thai green curry and I have a shepherds pie in the oven.

That's 18 meals I am smug tonight

I live on my own, I cook big portions so I can have left overs. Its not worth cooking if it only lasts one meal.

bloodywhitecat · 08/02/2023 20:11

I cook for me just the same as I used to cook for DH and I, now I just tend to freeze the extra portion for another day when I can't be arsed to cook.

OhClunge · 08/02/2023 20:12

Anything cheesy with & a glass of red wine and a glass of really chilled water

harriethoyle · 08/02/2023 20:12

Ideally I'd do baguette, pate, charcuterie, cheeses but the problem is that you can't buy it in single portions so there'd be loads left, and then I'd get sick of it on day 4 which would spoil the treat 😆

Gin

Thatcatisdrivingmenuts · 08/02/2023 20:14

A stir fry or a plate of cold stuff, such as bottled artichokes, hummus, cheese, maybe a few nuts, rye bread , salad or veg. Or anything leftover in the fridge from yesterday, if it's available.

Teriyakieverything · 08/02/2023 20:14

Baked Camembert and crusty olive 🫒 roll. Yum.

user1497787065 · 08/02/2023 20:17

Scrambled eg

DillDanding · 08/02/2023 20:18

I’d have toast. Or nothing.

I’m a shocker if left to my own devices. My dh worries about me and will cook freezer meals for me to have if he’s going away with work. But I’m usually too lazy to cook them.

RoseMartha · 08/02/2023 20:19

I like broccoli cheese or sometimes I add macaroni into it. I cook this from scratch. Usually if dc's are eating something I cant.

If home alone, will have salad or jacket potato and beans or beans on toast or omelette and salad or cheese toastie and salad or leftovers kind if thing. Sometimes I dont bother and have a cheese sandwich or marmite on toast.
Then make a fruit salad or something to get some healthy stuff in.

CloseYourMouthLynn · 08/02/2023 20:20

Chicken, mushroom and spinach al forno. Noone else in my house would have it, so when I have an evening to myself I batch make it and feast for a week on it.

PrincessHoneysuckle · 08/02/2023 20:21

Tub of Taramasalata a pack of toasted pitta and a bottle of cava or sauvingon blanc

user1497787065 · 08/02/2023 20:21

Oops posted too soon....

I would choose scrambled eggs and love it instead of the chicken, mushroom and tarragon dish I have just cooked with roasted new potatoes, tender stem broccoli, carrots and peas.

Just me. DH and adult DD - one picked all the tarragon out and complained the potatoes were under cooked and the other just decided they didn't really like it

DorisParchment · 08/02/2023 20:21

Poached egg on toast.

I feel your pain , do you remember when supermarkets had a proper deli counter. You could buy cheese and meat by the weight or slices, not just bloody ham - zero waste
I wish we could go back to that

Badbudgeter · 08/02/2023 20:23

salmon in the air fryer with some salad is what I should make reality is granola mixed with natural yoghurt. So nice and easy when you can not be bothered.

Chasedbythechaser · 08/02/2023 20:25

Toast.
Crisps.
Cream crackers.

If I figured I needed fruit I’d have a banana or raspberries and a yoghurt.

I’d have a very small grocery bill if I lived by myself. I hate cooking.

It would consist of -

Bread
Cream crackers
Butter
Milk
Tea bags
Crisps
Yoghurt
Bananas

RausageSoul · 08/02/2023 20:25

Loads of minty new potatoes with butter and mayo and a corn on the cob. I wouldn't feel obligated to make a 'proper' meal - would just eat the components I really liked.

Jacket potatoes with cheese and salad.

Nice bread and cheeses with dips.

Lots of fruit and granola.

Quiche or posh ready meals from M&S

itsgettingweird · 08/02/2023 20:27

Something easy and not good for me!

baguette
Cheese
Scrambled or fried egg
Gammon
Grapes

In fact ds is away in camp for 3 nights next week and I'm already planning for my easy foods and the inevitable slump I'll feel bh eating crap for 3 days 🤣

Booooot · 08/02/2023 20:27

I always have just a massive bowl of chicken wings.
