What would you cook for dinner....if it was just you?

I've just cooked sausages, little herby roast potatoes, various veg that each child likes, gravy out of the freezer.

At least an hour to do it all.

It's supposed to be the one meal that everyone likes but today the kids chipolatas 'taste funny' because they were from tesco not Aldi and no one seemed to really appreciate it.

I just started thinking...if it was just me here in my own I'd be happy with soup and a sandwich

What would you or do you cook if it was just you eating?

I long to be freed from the tyranny of cooking! My kids yo-yo between home and their own flats and when they are away it's sooo nice not to have someone constantly wondering what's for dinner!

I live alone and cook one decent meal a day from scratch. So far this week, Monday was a chick pea curry, last night was a stir fry with noodles, tonight was a homemade pizza. Plenty of curry now in the freezer for next week, rest of the pizza will probably be Saturday lunch.

No more having to take anyone else's tastes into account, hiding veg in sauces, holding back on the spices etc. It's bliss.

I feel your pain , do you remember when supermarkets had a proper deli counter.You could buy cheese and meat by the weight or slices, not just bloody ham - zero waste
I wish we could go back to that

Same here! I live a very long way from any form of decent deli, but used to love all the little twiddly bits. It’s not quite the same when one has to buy great big supermarket packets.
I especially miss decent olives. No one else likes them, so they are such a waste just forme.

There may be a theme here...
Just to ring the changes cauliflower cheese. DH hates cauliflower and I could eat a whole one.
Or a variety of cheeses with olive bread and a good glass of red wine.
God, sometimes it might be nice to be single, for a little while at least.

I half watched the apprentice the other week where they made these.

What recipe do you use if you don't mind sharing.

If I lived in my own I probably wouldn’t eat very much at all and toast with either scrambled eggs or mushrooms or beans would feature very heavily in what I did eat.

My go to meals when I'm only cooking for myself are:
Porcini Risotto
Linguine with chilli, lemon and prawns
Pasta puttanesca
Salmon and broccoli pasta

All things that DH doesn't like, though I'm persuading DS on the salmon so hopefully I'll have back up soon and can finally have fish dishes that aren't just cod...

DH and the DC are away for three days/four night next week. This last happened a decade ago (well, 9yrs and 10 months to be precise). I am putting an excessive amount of thought into what I am going to eat.
Do I just stick to Haagan Daas and a box of chocolates?
Do I rotate beans on toast/eggs on toast, possibly with sliced tomatoes on toast for a bit of variety?
Do I make myself a massive chicken pie from scratch and eat it hot on day one and then chunks of it cold over the following days?
Do I make some elaborate veggie meals and enjoy eating them without any comments about the lack of meat and the many weird things in them?
Cheese & crusty bread would usually be on the menu for times like this but I ate excessive amounts of cheese over Christmas and the memories are still too fresh!

God this has made me so hungry. I usually do a veg and cashew stir fry or veggie pasta of some sort, but sometimes I just love a big pile of chicken nuggets and red sauce.

I make my own yes. And the Apprentice task for a bunch of people who have never made them is truly evil! To a point that you don't appreciate till you try yourself. They do take some practice which I'm not sure they got!

Recipe for dough

Then a pork mince filling (I'm not sure where I got the original recipe - I've written it down somewhere - there's loads of online version which are pretty similar and you can adjust as you want.)

They are a bit of a faff, but they freeze well once cooked and if you stick in a paper bag they microwave well from frozen, so are worth the effort.
