Best jacket potato fillings?

Jacket potatoes are in the oven crisping up nicely. What are your favourite fillings? I normally just default to a monsoon of beans and cheese 😋

Ooh I love a jacket potato. Maybe with a spoonful of left over chilli or Bolognese? Tuna mayo sometimes, love beans and cheese too!

The filling you would normally make for a cottage pie. Halve and scoop out potatoes leaving a thin layer of potato next to skin as a lining. Spoon cold or hot mince and vegetable sauce in to potato . Mash the remaining potato with a fork and place on top. Score with fork, season with S&P and sprinkle with cheddar. Put back in oven on low to heat through thoroughly.

My Canadian friend maintains that the potato is the filling. She is otherwise normal and lovely.

In my order of preference

Leftover chilli, bolognese or other stew (meat or veg e.g ratatouille) + cheese

Coleslaw + cheese

Chilli and cheese is a winner every time!

Just so much butter that the potato inside is liquid, and a bit of salt. Heart attack territory probably but delicious!

Mmm I am also having a spud. It is in the oven at the moment. Dd says her choice is “more pesto than potato” then cheese.
I am torn. I have some Chilli baked beans. I think it might be those with grated cheddar.

Chilli con carne with grated mature cheddar on top.
Or beans with cheese ON TOP of the beans. I hate when I order one at work and they often put cheese underneath the beans 😨

I season the potato and add butter before the topping.

Or scoop out the potato mash with sour cream and cheese and double bake.

I’m going old skool with prawn Marie Rose but also am partial to tuna/cheese/olive melted.

So nothing else?!?! They serve better food in prisons 🤣

This sounds pretty immense! Don't think I'd cook it up fresh but next time I catch cook cottage pie I'll remember this and give it a go!

A very mature cheddar, butter and salt. Coleslaw if needs must for the health aspect.

Also like my jacket potatoes with coronation chicken.
Or sour cream and chive dip with smoked salmon.
Lots of butter and salt required for any option!

Leftover curry (couple of tbsp of dal or Chana masala is lush)
Garlic mushrooms
Sautéed cherry tomatoes with garlic (handful of baby spinach is nice here)
Feta and spinach

Ah no you see I'm a butter and cheese mixed into the inner, beans and then more cheese kind of person!!
