Or dinner, or whatever you may call your evening meal?

I'm considering fish cakes but not sure what with yet. We had chips and beans with tea on Monday, then chippy chips last night, because I've been a bit under the weather. Don't really fancy chips again but not got much "go" left after the first day back at work <sigh>

I briefly considered a walk to the shop for some tomatoes to do a really basic salad with them but have decided to wait & see if dd1 might go instead of me 🙈

Anyway, what are you all eating tonight?

Spaghetti bolognaise - DH did some batch cooking for DD yesterday and siphoned off a portion for us. We were going to eat it yesterday but I reminded him it always tastes better reheated the next day!

Fridge and freezer surprise

Made some coldslaw with red cabbage, carrots and apple. mozzarella sticks and dip from freezer, leftover homemade pizza from last night.

I'm chopping up potatoes, sweet potatoes adding a bit of oil and some herbs. Putting in oven for a bit then adding random veg and some salmon 🐠 and back in oven. Simples.

I've got a Gousto Box so it's got to be Vietnamese Style Sticky Lemongrass Pork Bowl, most of the ingredients I've never eaten which will be interesting, I wish I was having a Chippy tea now too!

Thanks lucysmam - I detest cooking but have done it for the best part of 20 years. This is a relatively new discovery - just chopping up stuff and putting it in the oven- that fortunately DDs seem to love.

I batch cooked a chilli con carne today, I’m trying to get 3-4 meals a week from batch cooking so I save some money and time the rest of January. We will have it tonight with rice, cheese, avocado and sour cream. Over next few weeks might mix it up a bit, have it with baked potato, tortillas or pita pockets.

Tomorrow will be making a big batch of beef stew with sausage, bulking it out with turnip and carrots. Will probably have the stew with dumplings and roast potatoes tomorrow, and mash or chippy chips the other weeks.
