It's me and DH:

  • M - 'breakfast for dinner' (scrambled eggs and mushrooms on toast)
  • T - chilli con carne with rice and soured cream
  • W - chilli con carne with rice and soured cream
  • T - mushroom risotto
  • F - chickpea and spinach curry with yoghurt, nan bread and mango chutney
  • S - chickpea and spinach curry with yoghurt, nan bread and mango chutney
  • S - cheese and potato pie

S - Slow cooker roast beef, roast potatoes & sprouts, carrots, broccoli & red wine gravy
M - creamy baked orzo with cauliflower, onion & mustard
T - Beef stroganoff (with leftovers), mash, green beans
W - Chickpeas, kale & ginger, flatbreads
T - Gnocchi with peppers & ricotta
F - Veg fried rice & curry sauce
S - Not sure yet but maybe squash stuffed with veg chilli

Monday- chilli with rice and homemade guacamole

Tuesday- leftover chilli and rice, or might put the chilli in wraps for burritos

Wednesday- chicken curry and rice

Thursday- leftover chicken curry and rice

Friday- salmon, broccoli, mashed potatoes with lemon and creme fraiche

Saturday- spicy chicken wraps

Sunday- spicy chicken wraps

I like to cook double in the slow cooker and then not have to cook the next day. I love thinking "what's for dinner" then realising it's already sorted 🙌🏻

W: Chilli lime fish with boiled potatoes and mange tout
T: out for dinner for friend's birthday
F: Fish pie and peas
S: beef in black bean sauce with rice and some sort of vegetable stir fry
S: pasta and mushroom sauce

Thursday: veggie burger and salad and fries

Friday: vegetarian doner kebabs in pitta bread with salad

Saturday: nandos

Sunday: pukka pies with mash, carrots and peas

Tuesday: Moroccan style chicken and roasted veg traybake thingy
Wednesday: spicy lentil stew with homemade flatbreads
Thursday: egg, chips and beans
Friday: M&S vegan chicken kievs with air fryer chips and peas
Saturday: going to a party so nothing / something quick
Sunday: dunno. Might do a roast if not too hungover

Mon - Garlic Prawn Warm Potato Salad
Tue - Steak Panini and salad
Wed - Beef Keema and Rice
Thu - Hoisin Pork and Mushroom Rice
Fri - Lemon and Coriander Chicken and Couscous
Sat - Probably a Takeaway or Frozen leftovers
Sun - Bacon Cheese and Tomato Flatbreads and salad.
I'll put lots of extra veg in to stretch them out for a freezer leftover portion. Some great ideas what a good thread

M - chickpea and spinach curry with some left over meat from the roast chicken in.

T - spicy chicken pasta

W - sausages with Mac and cheese and veg

T - chicken wedges and veg.

F - out with work for tea. The rest of them can fend for themselves.

Soup with chips??? Not sure if that is a genius idea, or the weirdest thing I've ever heard! Grin

Make proper chips from proper potatoes, warm a tin of scotch broth soup, put chips in a dish, pour the soup over and get stuck in.

I'm not sure I make it like the french but I fry cubed pork shoulder and diced bacon, with chopped onion, celery, carrot. Then add garlic, some chopped tomatoes, cannellini beans, a teaspoon of mixed herbs, seasoning and two tablespoons of water.

Put it in the slow cooker on low (at lunchtime) and ignore it until supper.

I don’t get the meals planned for a week thing. I don’t know what I fancy until the day and then cook accordingly. So those chicken breasts may get eaten on any day and may end up as anything from a cornflake chicken burger to chicken supreme 🤷‍♀️.

Sunday - chicken fricassé (Caribbean style), roasties and veg
Monday - leftovers
Tuesday - Salmon and veg
wednesday - chick pea curry
thursday - bolognese or shepherds pie depending on how many tators are left
friday - chicken Kievs/goujons and chips

Personally I’m too busy to cook spontaneously. I meal plan, meal prep and it usually works. I was sick a couple of weeks ago and my DH had Covid it definitely fell down

Sun: friends came for lunch, Cashew nut roast, mushroom sauce, new potatoes, broccoli, carrots followed by lemon tart & raspberries.
Mon: enough left for leftovers with extra broccoli , yay!
Tues: Lentil & spinach Dahl, naan bread, chickpea samosas,
Wed. Omelette & salad (massive!)
Thurs. Tomato & basil soup, wholemeal toast, Apple pancakes.
Fri. Spinach& ricotta canneloni in tomato & red pepper sauce, salad (not massive))
Sat Chicken, spinach & chickpea curry, rice & poppadoms.
I make enough curry for 3- 4 weeks so most weeks I only have to defrost & reheat. I do the same with dahl, tagines, pasta sauces, veg stews, try to make enough so there's one or two meals each week ready in the freezer.

I meal plan to optimise our use of ingredients.
If I know that one meal is going to use 1/2 an aubergine, I'll make sure I plan another meal that uses up the other 1/2.
It prevents food waste and keeps our shopping bill low (we only spent £45 this week for two of us). It also stops us having a random takeaway because we don't quite have the ingredients in for a decent meal.
I appreciate different approaches work for different people though.

This used to be me too. But when I had my son, and had much less time even for thinking about dinner (no family around, DH working full time and me trying to finish a master with a baby at home), a friend recommended a weekly planner on the fridge including planning meals for the week. So I gave it a shot and noticed it was saving me time, stress and money by writing out the meals in advance. Might not work for everyone, but it did for us and it's a habit that's stuck.
