It's me and DH:

  • M - 'breakfast for dinner' (scrambled eggs and mushrooms on toast)
  • T - chilli con carne with rice and soured cream
  • W - chilli con carne with rice and soured cream
  • T - mushroom risotto
  • F - chickpea and spinach curry with yoghurt, nan bread and mango chutney
  • S - chickpea and spinach curry with yoghurt, nan bread and mango chutney
  • S - cheese and potato pie

Mon (tonight) - home done pizzas (buy the bases and add toppings)
Tues - prawn stir fry and rice
Wed - ham/egg/chips/beans
Thurs - spaghetti and meatballs
Fri - chicken of some description as I've got some to use up

T - Veggie Lancashire Hotpot
W - Veggie Curry with chapattis
T - Veggie Risotto
F - Cajun "Dirty Rice"

Weekend, not sure, we're having friends over Saturday so might just do a big pasta bake or something with garlic bread and salad.

The hotpot and curry we'll be making more than we need to freeze for next week.

Sun - Roast chicken dinner loads of veg (cauli, kale/cavalo nero, carrots, cabbage, roast potatoes and gravy)

M - Fajitas with left over chicken, peppers, sour cream, guacamole, home-made coleslaw

T - Jacket potatoes - tuna sweetcorn mayo, cheese, salad, homemade coleslaw - might make chickpea & chorizo stew to go with mine then have for lunch throughout week

W - Stir-fry inc. leftover chicken in lemon or Kung pao sauce noodles with spring rolls and dumpling for starters (Aldis)

T - fish, oven chips and peas (Aldis lemony lightly battered frozen fish)

F - kids get Pizza and dough balls - I'll do another stir-fry with chicken (fresh - the Sunday Roast chicken is no more!) Veg and rice

S - late brunch - mix of sausage, egg, beans, sour dough, bacon, avocado - dinner might be a shop-bought curry or something quick and easy like pasta, garlic bread and salad

Then back to Sunday. We used to eat a lot more steak and fresh salmon. This is us cutting back. Lots of frozen stuff from Aldis. The Roast chicken costs about £5 and sees us through quite a few meals during the week. It's not very exciting and I'm going to have to come up with some more interesting dishes. But it's seeing us alright for now.

Gammon egg and chips tomorrow.

Steak and potato gratin at some point (leftovers)

Then just winging it with the rest.. have a few giant crumpets kicking around and may try and turn one of them into a pizza!

Every week I cook once and make at least 12 portions. There are 3 of us and we eat that meal twice in the week and the rest is frozen for meals in later weeks.

It means in the weekdays we will eat 4 different meals, with one being eaten twice. Each morning that a frozen meal is needed,nits taken out to defrost and in Eve, goes in oven and just potatoes or rice or pasta is cooked.

Weekend, we tend to eat out once (usually at friends or family but sometimes in restaurant) and other day to have some thing like frozen pizza.

Peanut chicken sounds epic! Is it an online recipe?

We're having Syrian mezze tonight as that's our country of the week.
Toad-in-the-hole tomorrow.
Then other meals will include roast chicken, pasta with ragu of some description, oven fish & chips on a night when I'm too tired to be bothered.

I’ve made a lot of soup for lunches this week.

Tonight will be spag bol, tomorrow is steak pie (made double on Sunday), Wednesday will be carbonara, sausage casserole and baked potatoes for Thursday and pizza Friday.
