I would like to try to start a project of getting my 10-a-day of fruit and veg in every day.

Anyone fancy joining me? I find groups on here of support so useful.

I know lentils and beans and chickpeas are part of it too so I will up them. I'm vegan so I'm hoping that should make things easier as I eat lentils as part of my diet anyway.

This thread is for everyone who would like to focus on 'eating the rainbow' as part of a healthy lifestyle.

Or anyone who does this already who has any hints and tips?

I agree about the kimchi -must make some! It's always worth the faff in the end but I have to psych myself up to it .

Today I've had;
3 kinds of melon
Mango
Apple
Veggie protein mix
Roast onions, kohlrabi, celery, aubergine and courgette.
Carrot salad
🍅 (of course)

Keep up the good work everyone. I'm trying to make my goal about eating as many as possible and enjoying my choices, more than reaching 10 every day. The courgettes were today's highlight, making very tasty spiced chickpea and courgette fritters

That's a food way to think parttimegoddess i always put far too much pressure on myself to hit a target. And it's already feeling a bit like a chore, another chore. So, i might lighten up a bit.

I am feeling like some juicing and soups for a few days.

Hello, I've been lurking here for a while but struggling with motivation so I'm delurking to try and motivate me more and I'm starting a hard copy list. I thought I was at 8 so far today but I struggled to get through 10 radish so that may only be 7.5 and one was a banana milkshake so probably shouldn't count! I am doing baked beans for tea but assuming those won't count either!

Welcome EatSpray . I definitely find it helps if I write it down. I just have a note set up on my phone and add it in as I eat it. Then I copy and paste later on in the day to here.

I also tried radishes last week but could never manage 10. So I gave up on that as one whole portion. Still nice as a wee extra sometimes though.

Beans do count! I think I'm having them tonight too. Enjoy

Yesterday I ate just over 5 portions, but the best was the leftover beetroot, onion, roast squash and spinach in a kind of frittata- yum.

Not done so well today, probably only 4 but not feeling too well:
Strawberries
Tomatoes
Peppers
Apple

So felt I've eaten plenty however only reach 5 by the rules. I'm pretty happy with it though and I'm about to have some olives, though not a portion!

I've been away and eaten out/takeaways over the weekend so not had as many portions. I did have some Kenyan food, a lovely matoke dish (green banana) & kachumbari (chilli, onion, tomato & coriander salad) which I really must remember to make at home!

I hope you're feeling better, Wildernesstips. I love frittata but don't often make them since going vegan... I do have a recipe based on chickpea flour but it always seems a bit dry when I make it.

Today I had
B: strawberries, apple with yogurt and seeds (1)
L: salad with tomatoes, grapes, hummus, avocado, cucumber (3)
D: tofu with hoisin mock duck, steamed broccoli, carrots, cauli and sweetcorn. There was also some spiced potatoes but something went really wrong because they were inedibly hot! (2)
Snack: apple and orange (2)
Well that's 8, I will concentrate on more veg with dinner tomorrow I think.

I'm happy with that. Juice and soup are much better for me when I'm working. It gives me energy without bloating.

I enjoyed every bit but didn't need any more food really.

Busy day with not much time to meal prep.
Green beans, chicory, cucumber and stuffed mushroom with some fish at lunch.
Only a bit of red slaw with dinner
Pineapple, melon & prunes.
Looking forwards to some autumnal soups!

Butternut squash/green beans/tinned pineapple/onion (in a Thai curry) and a small portion of broccoli (estimate 3)

I told DD15 about our challenge today as she weighed the broccoli we were sharing. She's been slightly obsessed with getting her 5 a day for a while and often weighs veg for herself. She remarked she'd really struggle to hit 10 unless she had a roast every day 😂

Breathmiller that's quite the smoothie!! How did it taste? Lord, my kids complain when given a spinach and pineapple one. I'm going to threaten them with parsnip and courgette smoothie if they moan again, LOL.

PTDG that's great your dd is into her veg too. She might come up with some new ideas to wedge a few portions in?

maygirl that reminds me I am fond of a prune. I used to make a rather weird but delicious salad with lentils, prunes and balsamic vinegar. Wish I could remember what else I put in it now.

that's quite the smoothie!! How did it taste? it was really delicious. Creamy, fresh and sweet enough. The first ingredients were juiced rather than blitzed which makes a massive difference. I have the Jason Vale juoce plan up on my fridge and it is a variation of his sweet and smoothie blend (it usually has broccoli in and no pineapple but it's what I had in)

love the sound of your lentil/spinach/lemon soup. Do you follow a recipe? it's the family's favourite. It's the Jack Monroe recipe. I don't tend to follow the amounts anymore so i think I use a litttle less lemon akd muvh more spinach.

Garlic, onion, chilli (just a little and optional). Saute. Add red lentils and veg stock and cook til soft. Add spinach (i add loads) , lemon juice and lemon rind. I very rarely add coriander to it but it also nice when I do. Blitz.

It's a great way to use up spinach that needs cooked rather than raw.

Breathmiller ah I'd missed it was a juice mix. I wish I was more experimental with my smoothies but I get worried about wasting the ingredients. So tend to stick to the same ones, and people are bored of them.

For those who want to make that juice, i forgot to add that I also put in a whole lime (peeled) and some pumpkin seeds and peanuts (usually it is cashew nuts)

Thank you for the soup recipe @Breathmiller, I'm definitely giving that a go
I would add spinach and butternut squash to the frozen veg I usually keep in. The Thai red curry I made this week used frozen butternut and green beans and tinned pineapple which made it really easy and very little prep
