I would like to try to start a project of getting my 10-a-day of fruit and veg in every day.

Anyone fancy joining me? I find groups on here of support so useful.

I know lentils and beans and chickpeas are part of it too so I will up them. I'm vegan so I'm hoping that should make things easier as I eat lentils as part of my diet anyway.

This thread is for everyone who would like to focus on 'eating the rainbow' as part of a healthy lifestyle.

Or anyone who does this already who has any hints and tips?

I'm already wondering what I'll do in winter when the loveliest of the fresh fruit and veg is over. Luckily I do like cabbage!

@MinesAMassiveSalad I agree, it's a fabulous time of year for fresh stuff. The green beans (and corn) were both from a local farm too and tasted so fresh and delicious.
I also love root veg (and stews and curries) and the berries that I eat are usually frozen. It will be an interesting challenge 😊

In winter I usually go: frozen berries, local root veg and cabbage, Spanish citrus.
That will be 3/ 4 a day when I'm focussed!

Hello all, some great ideas here! I’m also planning to make sauerkraut with cabbage and maybe some pickled beetroot to keep things interesting over autumn and winter.

Breakfast:
Mango and natural yogurt
Lunch
Avo, tomato, lettuce, apple
So far 5 total

It is sooooo easy @MinesAMassiveSalad. Cut the cabbage up in small slices, add about half a cup of salt per cabbage, mush it up with your hand (or your stand mixer ) till there’s watery stuff in there, shove it into a jar and squash it down so the water covers the cabbage. Delicious for weeks!

Yes, it's definitely going to need a bit more planning and cooking through the winter. All the summer veg is easier raw.

I bought some frozen veg to try to help today which I don't normally buy apart from peas. For those busy days. I got parsnips to chuck in the oven and butternut squash to make a quick soup. Anyone recommend any others?

I love sauerkraut and kimchi. I don't make my own but I have a friend locally who makes and sells loads of different kinds. It's delicious. Must order some actually.

Today i came home from work to a feast. Dh had tried to get me my 10! I'm not sure about the last 5 in terms of portions, I was just enjoying the meal but I'm sure between the whole lot there was a good 5.

Edamame beans
Chopped shallots (life saver)
Mixed bags of Mediterranean veg
Sweet potato (cubed)
Sweetcorn (but tinned is just as nice)
Green beans (but only like birds eye)

I like edamame unfortunately they very much do not like me. My body violently and painfully rejects them very quickly. Which is odd because I can tolerate soya in other forms.

You've reminded me I love tinned sweetcorn, I'll add it to my shopping list.

I have eaten terribly tonight after hitting my 10 a day. Lots of crisps and sugar. Ach well, onwards and upwards tomorrow

I had a huge variety yesterday but not much portion wise (probably just about 4).
Cherry tomatoes
Fruit juice
Rocket
Avocado
Olives
Spring onion
Pepper
Cucumber
Coleslaw
Beetroot

I love those bags of Mediterranean veg. I also buy frozen peas, sweetcorn, butternut squash and a mixed bean bag from M&S. My Dsis swears by the frozen avocado halves you can buy, but I am yet to try them.

Hello everyone! So good to see how everyone is doing.
A fail for me yesterday - only five portions and none at the evening meal. Lost my mojo a bit.
But back to it today. I have lots of runner beans, tomatoes and blackberries to pick so that will definitely be amongst them!

When I was at the freezer section looking for easy veg I noticed a lot of them were microwave only. Whchis a bit of a bummer because I don't have a microwave at home.
There were two packets that looked fab, crushed peas with mint and sweetcorn with chilli. I had no idea how I would cook them though? I usually take it with a pinch of salt and chuck microwave only things in a pan but I'm not sure they would be crap.
I'm also not keen on these little bags to steam for the extra plastic involved.

Good afternoon folks. Sorry I was absent yesterday but I fell off the veg wagon a bit! Thanks for the encouragement to look at the week as a whole which is reassuring.

Breathmiller I know you asked for frozen veg, but how about tinned bean salad? Napolina does a 5 bean one which also has sweetcorn in, so quite a good variety of veg. I also think frozen brussels sprouts are very nice, and the supersweet corn is gorgeous if you can get it.

Today so far I have had
B: raspberries and apple with yogurt and seeds (1)
Snack: large bowl of raw veg with hummus to dip(4)
We're going to a pub for late Sunday lunch, but its a roast so should hopefully have a couple of portions of veg at least?

I have had my best day ever today - 12 varieties, almost 9 portions.

My new favourite beans are the black turtle.

I had run out of carrots having had them as a snack earlier. Then I remembered the butternut squash in the freezer and bunged that in my bean chili instead. Rather nice.

I think any more than 5 is a good day to be honest. I have 10 as a goal but if I hit 5 I feel I've done okay.

Yesterday was a flop. I did end up with maybe 2? 3 at a very push.

1 portion mushrooms
A couple of olives
A small glass of apple and mango juice.
Small amount of houmuss
2 mango smoothie ice lollies. (If they even count?)

I won't even go into what else I ate but it's fine. I'm harnessing my inner Scarlett O'Hara and trusting today is another day.

I'm not sure at the moment thay I do feel better but I think that's to do with being overworked the last month and chasing my tail.

I have a day to catch my breath a bit more before a really busy week ahead so I am doing some self care.
Already done a small yoga & meditation practice (I might do more later) , walk on the school run. Healthy breakfast and now in the bath giving myself a morning of pampering. My skin feels rubbish as I stupidly had a satsuma last week knowing it sets my skin off so now it has stopped being inflamed it is dry and dull.

I plan on making some soup for today and to freeze for the week ahead. And make a veg heavy pasta sauce for tonight's filled pasta.

Maybe take a longer walk to school this afternoon if it stays dry.

So a bit of self care and a reset day. With as many veg as I can

An occasional blip is no problem Breathmiller.
Maybe I feel better because I was coming from a lower base. It's not every day that I'm feeling it, just on average.
Enjoy your reset day.

I am writing my shopping list and pulling out my plum recipes. I have a tree ready to drop its fruit!

Oh I LOVE fresh plums from the trees. Some of my clients at this time of year come in with bags of them from their gardens.

I made plum chutney a few years ago there were so many.

Yes, it's fine to have a blip, i agree. No big deal. Onwards and upwards towards the rainbow. 🌈

Afternoon, rainbow eaters.
The pub roast was a bit disappointing yesterday, the nut roast was drowned in gravy and had turned into soggy stuffing type texture. They also gave me a non vegan Yorkshire when i ordered the vegan roast, but i suspected it was an error and checked with them before eating it. (they didn't apologise which made me even less impressed)

The roasties were great and there was a decent portion of dull but ok other veg too (carrots, cabbage, green beans).

In the evening I tried to stick to yogurt and fruit but things got a bit wonky. I always find it harder to stay on track if I've over indulged, I don't know if that's psychological or physical?

Anyway today is going well with peach and berries for breakfast, ratatouille and lentils for lunch. 4 or 5 so far.

Breathmiller are you in Scotland? I'm in England and it's a rather grey uninspiring Bank holiday here...

MinesaMassiveSalad I love black beans too! They're fab for nutrition, and go great in a salad bowl or a chilli.

We were hungry so we had our dinner very early.

Had time today to cook and have a fridge full of veg so it was really easy. And enjoyable actually.

I have a freezer full of soup for the week too.
-Lentil lemon and spinach
-Spiced ginger butternut squash
-Broccoli with Engivita.

We had filled pasta with a veg heavy sauce.
