Which simple, simple dish do you love?

I adore a plain, beautifully cooked and seasoned omelette. At most with a few chopped herbs but cooked on its own is fine. Served with a green salad - something like fresh little gem lettuce leaves or pea shoots - dressed lightly with lemon and olive oil.

GloriousMystery how do you do your courgettes please? Just sliced into rounds and fried? Oil? I can NEVER get courgettes right.

Courgette slices are amazing if you soak them in milk before frying them, then coat them very lightly in egg.

Red leicester cheese on cream crackers. Or ready salted crisp sandwiches. I could eat them until I pop.

Fried sliced courgettes very very well done sprinkled with plenty of salt and crispy fried maple streaky bacon. Side serving of bread and butter to make sandwiches.

My favourite dinner when on my own is either poached or boiled eggs on toast. Usually poached if I can’t be bothered to peel eggs. Sometimes with asparagus/smoked salmon. And it has to be on toast. Proper yellow yolk eggs. M&S Maran island or Clarence Court eggs. 😍

Spaghetti con aglio e olio 🤤🤤🤤

Spaghetti, olive oil, garlic, Parmesan and chilli flakes. Takes just minutes to cook and is diviiiiine.

This thread is making me very hungry. I second a nice fluffy omelette with cheese, & cracked black pepper. Served with a light feta side salad. Yum

Vegetarian burgers with sweet potato fries & lashings of Mayo, plus double cheese on the burgers.

Decent baguette, butter & soft blue cheese. These are the things that heaven’s made of Smile

Tomatoes on toast: DS had for breakfast today as I had some fantastic tomatoes from the farm shop, chopped roughly with salt, basil and a little olive oil. Needs nice toast to make it special.
If I'm in a sourdough baking phase, fresh bread and butter.

Poached eggs on toast for me, too. A very simple dish which, done perfectly, is sublime.

Really good bread is essential : none of your supermarket sliced rubbish. Sourdough is ideal. The eggs must be soft poached, the butter must be Lurpak, the salt must be Maldon, the pepper freshly ground and the accompanying mug of tea must be Yorkshire, and brewed strong.
