We’re sticking with tradition so serving fish. Cod with a bacon crumb cooked on tomatoes, peppers onion and capers with herby cous cous and garlic tenderstem broccoli. Minimal input required for tasty result!

Gumandbass I kind of devised it myself, but I put the tomatoes (I use cherry tomatoes halved) chopped peppers and red onions and capers in a roasting tin, spray with oil and add a good glug of balsamic vinegar and plenty of black pepper. Start them off in the oven. On a baking tray lay out streaky bacon and bake until really crisp, almost brittle, remove from oven and blot with kitchen roll. Put the bacon, some stale bread and a bit of lemon zest and some parsley in a processor and blitz until you have a crumb. Put the cod on top of the veg and pile the crumb on top. Put it back in the oven and bake for another 20 mins.

Steamed brown rice, with prawns, peas , edamame beans in a lemon and chilli cream sauce... may do some garlic bread on the side I think .
Sunday will be traditional Easter/lamb roast with Guinness cake topped with a salted caramel cream frosting
