Was going to be a full roast chicken dinner but we got up late and had a big breakfast so don't fancy it now. Thinking of doing a chicken salad with a slaw made from kohlrabi, red cabbage and spring onion but it doesn't really feel like the weather for it!

Love this thread! We're having chicken breasts wrapped in streaky bacon for meat eaters and leftover vegan chestnut sausage roll filling baked into a loaf for veggies; roasties; leftover Xmas red cabbage; sprouts; mashed carrot and swede with nutmeg and cream and green beans. Loads of shrivelly dead apples in the fruit bowl so they'll go into a crumble with a tin of apricots.

Mince and onion pie, mash, cabbage, carrots, peas, broccoli and gravy. And our takeaway last came came with extra chips so we had those as well Blush

Chicken stir fry in a honey and black pepper sauce from a Slimming World recipe that I have modified to make it a bit nicer by adding sesame oil and a lot more honey!

Traybake - paprika chicken thighs, roasted thyme potatoes, roast courgette and red peppers. All thrown in oven in one dish. Easy and Little washing up.

We were having slow cooked beef shin with carrots, onions, mushrooms and gravy, some mashed potatoes and yorkshire puddings.. but, we are in the midst of a power cut (1.5 hours into the 4 hours roasting time of the beef!), and we aren't expected to have power again until 9pm at the earliest. So we had ham and cheese sandwiches, in the dark, with some pringles. Regretting the day I ever opted for all electrical appliances in the kitchen! What I would give for my gas hob back now to make a pot of tea, and my gas oven... for the now well and truly ruined beef. An emergency trip to McDonald's drive thru for a coffee may be required if no power by 9pm.. maybe a McFlurry too.

Had a few nice meals recently, all homemade from scratch.

First was a made up concoction which we call butternut mac n cheese. It uses butternut squash, which I cube and simmer with milk, garlic, seasoning, stock and a pinch of nutmeg. Once soft and cooked through, this is then pureed and, whilst it's still warm, I add whatever cheeses I have available to it, so it melts into it.....mozzarella and cheddar works well.
This is then stirred through cooked macaroni pasta, topped with homemade sourdough breadcrumbs and dried parmesan cheese and then baked in the oven until the topping is golden brown and crispy.

We also had homemade cod nuggets, coated in a mixture of seasoned breadcrumbs and rice krispies and served with homemade chips and mushy peas. We then had homemade Baileys' strawberry and cream and white chocolate ice cream served with a salted caramel sauce.

Last night we had homemade beef and aubergine pasticcio, which I topped with a white sauce with egg in it so that it set like a moussaka. It was very tasty.
I basically fried the mince off, then fried onion, garlic, red pepper and aubergine separately. Putting the veg aside, I put the mince back into the pan and added some tomato puree and a tin of tomatoes, (which I crushed). Cooked out the tomato puree for a minute or 2 then added the veg back, seasoned with salt and pepper, added ¼ tsp cinnamon, a little bit of the pasta water to slacken the sauce and cooked through for 10-15mins.

Meanwhile, I had cooked some rigatoni pasta and tipped it into a deep dish, then topped with the beef and aubergine sauce and then poured the white sauce over the top and then baked for around 40-50 mins until set and golden on top. Was served with a salad.

I'm chopping 2 turkey steaks into chunks, cooking with mushrooms and some leftover onion, reducing some white wine in the pan, adding cream, and serving over pasta (or rice) - we've no potatoes left. Dd will heat a chicken and chorizo potato dish she bought herself.

Yesterday it was premade beef meatballs in tomato sauce from the oven, served over (bought) fresh tagliatelle.

The rest of the week is freezer surprise as I am fed up buying food that is rejected and frozen, so freezer is currently chokka, and I have cancelled the grocery order which was due today. So it will be a lot of chicken and turkey (as dd is on a "no red meat" phase so that's what I'd been buying), a beef stew (from chunks frozen a few weeks back), some odd veggie mixes (as that's what she's bought when shopping with DH) and 1 person portions of things that we had not used up as our patterns totally changed last March and there were no more 1 person dinner nights.
