Help with stupidly hard quiz

Each year my work does a stupidly hard quiz. There are many stages and we get a month to try and do it.

Anyone help me with this stage? there are 21 pictures of celebrities and I've managed to work out who they all are but now I'm stuck on working out the password to the next stage. Each picture has a coloured Roman numeral in it so I assume I have to use those to work out the answer...

Next...? Well I've just had a look at stage 7 and had a little cry. Not sure how well me taking pictures to post will work but i'll have a go.

Basically the next stage is entitled 'code breaker' and there are 26 different jumbles of letters we have to solve. No idea how i'm going to fit them in a photo. How many photos am I allowed to post per day?

How many levels to this are there?

I assume it's too much to hope that the string of letters and numbers at the top is the number of the letter you need to take from each diamond...?
