Would you tell me your favourite cocktail please?

I'm creating a new cocktail list for where I work - for when we reopen, and I'd like some opinions on what you expect to see on a cocktail menu, and what your favourite cocktail is.
Normally I'd ask customers but we don't have any of those so I'm hoping Mumsnet can help with some suggestions!
If you were staying in a small hotel, or attending a function/going out for drinks or dinner somewhere, what would you expect to see on a cocktail menu, and what would you be likely to order and drink?

Singapore Sling - absolutely love them. Most places make them if I ask but they're not often on the menu.

My absolute favourite is a Sidecar.... preferably served in a coupe glass. A complete classic. In the days when we were allowed out ( remember those days? ) I used to occasionally stop off at a cool bar near Waterloo and have two with my friend.

Espresso Martini
Old Fashioned, the best one I think I've had was at the Hutong at the Shard, £16 which is eye watering but amazing! It's on their website.
A proper dirty gin martini with tons of olives not just 1 or 2 piddly ones!

When I was 18 I used to drink Malibu and milk. Lots of ice.

It didnt have a name as such but was lovely!

Love an Espresso Martini, Amaretto Sour & a proper Margarita too.

But my ultimate favourite that I will always, always order if I go out because you hardly ever see it on a menu (and it isn’t one of those classics you can order even if it isn’t on the menu because they often don’t have the right ingredients) is an Aviation. Mmmm.

I either like them very creamy, very tart and sour, or peachy/pineapple/banana thick like a smoothie.

I don't like a lot of cocktails: whisky or champagne based ones.

I find most cocktails sickly, so may not be your audience. I do generally order one, though. Just often disappointed!

I hadn't realised how fashions change in cocktails.
As a teenager I used to drink Tequila Sunrise or a Harvey Wallbanger, I never see them these days.
Now I'd choose a Mojito. And a Snowball at Christmas.

My absolute 100% favourite is a Singapore Sling, but I don't really see them any more on menus. Made properly, it's delicious.

I also like a white russian, aperol spritz and daiquiri.
