Would you tell me your favourite cocktail please?

I'm creating a new cocktail list for where I work - for when we reopen, and I'd like some opinions on what you expect to see on a cocktail menu, and what your favourite cocktail is.
Normally I'd ask customers but we don't have any of those so I'm hoping Mumsnet can help with some suggestions!
If you were staying in a small hotel, or attending a function/going out for drinks or dinner somewhere, what would you expect to see on a cocktail menu, and what would you be likely to order and drink?

My absolute favourites are the Manhattan and a classic gin Martini with a twist of lemon. Yum.

I don't have a sweet tooth so my favourite cocktail is a very dry dirty vodka martini with olives. Especially with Grey Goose vodka.

Pornstar Martini (but only from one bar, which closed down years ago. They were £8 a pop even then and we spent a fortune on them almost every Saturday night when we were younger. Never had one that even comes close)

Cosmopolitan, but again only from a selecr few bars, that were actually proper cocktail bars. Wouldn't dream of ordering one in a generic bar or restaurant.

A well made Mojito, summer drink extraordinaire.

I have never been a fan of home made cocktails / cocktails in establishments that don't specialise in cocktails and don't get me started on things like "fishbowls" or slushy cocktails or BOGOF cocktails.

Pornstar martini but I prefer it without the egg white
Chocolate or espresso martini, I oft n take the chocolate one in lieu of a dessert
Singapore sling
Mai tai

Maybe go back and research the Sixties, a lot were less fancy but equally very good. We had the sweet concoction so much now, I sometimes fancy a simple one.

And also please add a decent selection of virgin ones, I get fed up with a fruity one with just some lemonad and tonic in it, soooo boring.

A bit dated maybe, but I go to a specific little town in France every year and I hang out for their Planters Punch & I book an overnight at the airport hotel and there's an old bloke there who makes THE BEST Brandy Alexander.

I'm low Carbing (to control diabetes, not weight, or it would have gone out the window by now in lockdown!!) so most cocktails are off the menu right now

I drink Manhattens. I personally like them with a Luxardo cherry, but have had them in Kentucky (made with bourbon, though they can also be made with rye) with a twist of orange which also worked.

Dirty Martinis are popular with my friends as well.

You need a creamy one, such as a white russian which is really easy to make and a fruity one...a good Pina colada should do it.

I enjoy grasshoppers too though I make them myself, never seen them on a menu.

A classic champagne cocktail is hard to beat though I usually just use prosecco.

I really enjoy going in to a cocktail bar and seeing a menu with decent classic cocktails. I don't like very sweet drinks though.

My current favourite is a Vodka Gimlet, also partial to Lemon Drop Martini. Love a French and Espresso too.

Used to get a gorgeous Flirtini in a restaurant in Hammersmith, never been able to find one as good again.
