Would you tell me your favourite cocktail please?

I'm creating a new cocktail list for where I work - for when we reopen, and I'd like some opinions on what you expect to see on a cocktail menu, and what your favourite cocktail is.
Normally I'd ask customers but we don't have any of those so I'm hoping Mumsnet can help with some suggestions!
If you were staying in a small hotel, or attending a function/going out for drinks or dinner somewhere, what would you expect to see on a cocktail menu, and what would you be likely to order and drink?

A mojito is my favourite, I really like raspberry mojitos too.
I’m always tempted by the special “cocktail of the month” for something a bit unusual.
Mmm I want a cocktail now.

I love a classic champagne cocktail. Sugar cube covered with brandy topped up with champagne. Or something that makes you squint a bit like a margarita or a gin martini.

I really fancy a martini now.......

I love an Old Fashioned. My favourite bar does one that they call an “Old Fashioned on Crack” that is a really nice twist. It has plum bitters and cocchi Americano in it

When I was pregnant first time round I was craving a bubblegum daiquiri the entire time, it's so lush. Funnily enough I'm now on my second dc and still haven't had one in all that time😂

Espresso martini is a must, especially if serving food. It's the best after dinner cocktail.

Singapore sling is one you don't see very often but is lovely.

A Long Island Ice tea if done properly

A rum punch:
2 parts orange juice
2 parts white rum
1 part lime juice
1 part pineapple juice
Grenadine syrup
Angostura bitters
Dusting of nutmeg
Had it in Grenada many years ago and still remember it!
