Would you tell me your favourite cocktail please?

I'm creating a new cocktail list for where I work - for when we reopen, and I'd like some opinions on what you expect to see on a cocktail menu, and what your favourite cocktail is.
Normally I'd ask customers but we don't have any of those so I'm hoping Mumsnet can help with some suggestions!
If you were staying in a small hotel, or attending a function/going out for drinks or dinner somewhere, what would you expect to see on a cocktail menu, and what would you be likely to order and drink?

Straight up for them all, can't stand ice in any drink.
Original margarita.

Cosmopolitan (flaming cosmo is even better where they set fire to orange peel and put it over the top. Revolution used to do it, that was where I found out about it. Was gutted when they stopped).

Tequila sunrise.

Sex on the beach.

Don't mind blue lagoon either.

One I want to try is a pink gin spritz (pink gin, Prosecco and lemonade. I love pink gin and lemonade and I love Prosecco so cant see why I wouldn't like it.

I like a nice hit of hard liquor if I am having a cocktail, none of your wishywashy ickystickies!

So to that end my most favourite is a White Lady, equal gin, cointreau lemonjuice
Also a Sidecar...sub brandy for the gin, or a Gimlet...basically gin and limejuice
Pretty keen on most martinis....espresso, dirty, classic

Old Fashioned is lovely of an evening by the fire

I do like Brandy ALexanders though...like alcoholic custard!

Also Negroni and Americano..more or less a negroni made long with soda.

I am not a fan of very sweet cocktails and they often seem to dominate on short cocktail lists. Nothing with too much fruit juice for me. You really can't go wrong with a champagne cocktail. I also love an old fashioned. Tom Collins is nice and refreshing. My local place does a passion fruit daiquiri which I thought would be sweet, but is actually nicely balanced and tangy.

I love a Hemingway Daiquiri and an Amaretto Sour. I definitely don't like sweet and generally wouldn't choose creamy unless I was only having one drink.

This thread has inspired me to up my drinking. Why have I not been making more cocktails during this quarantine?!
The most recent cocktail I loved to make was : gin, Rosemary syrup (equal parts water & sugar + fresh rosemary), bit of soda water and lime or lemon.

I love a Gin Fizz, and they are almost impossible to find these days.
Love a proper Margarita, last one I had came from some sort of smoothie dispenser and tasted vile.

I am currently favouring the Americano which is a classic Italian aperitivo. It's similar to a Negroni but minus the gin and plus some soda water.

I can make a basic gin fizz. But can never get the bitterness just right or the mint and sugar in on the top of the glass is just overkill for a cocktail in my pyjamas.

My go to cocktails are:
A well made mojito - brown sugar, plenty of mint.
And a Pina Colada made with ICE CREAM. Lush.
