Would you tell me your favourite cocktail please?

I'm creating a new cocktail list for where I work - for when we reopen, and I'd like some opinions on what you expect to see on a cocktail menu, and what your favourite cocktail is.
Normally I'd ask customers but we don't have any of those so I'm hoping Mumsnet can help with some suggestions!
If you were staying in a small hotel, or attending a function/going out for drinks or dinner somewhere, what would you expect to see on a cocktail menu, and what would you be likely to order and drink?

I also suggest talking to the bar staff about mixing up some house cocktails which change monthly.

I'm not keen on sweet or creamy cocktails so for me it'd have to be:

Aperol Spritz
Negroni
Dark and Stormy

I like aperol spritz and Margarita (regular and flavoured) and I like to make one with vodka, limoncello and apple juice and a bit of lemonade.

I'd never had them before till I was on holiday in Menorca but really enjoyed one called a Hugo. Elderflower prosecco and soda water I think it was. Really light refreshing and summery.

We are experimenting with lots of gin cocktails at the moment, so I'd go for a Verdant Lady (perfect use for all that fresh mint coming up in the garden Grin) or... I think it's a London Mule - gin, ginger beer and lime. I love a margarita with Cointreau too or a proper rum punch.

My new absolute favourite is a Pisco Sour (since I had one at Ceviche in London). Delicious, nice and sour, not too sweet.

I've been highly disappointed in the last 6 months (before the pandemic obviously) that I couldn't find a margarita and a frozen margarita anywhere except in Mexican type restaurants. I don't want to have to go for a whole meal just to have a couple of margaritas!

They used to be common but I think some of the recent (horrible cocktails) have replaced some of the proper classics Sad

So I would want a decent

Margarita
Frozen margarita (in the summer especially)
Midouri sour or Japanese slipper
Or whiskey sour (but not one with bloody coke!)

Good luck with your new menu, and I'm keeping everything crossed that things pick up quickly for you once you can open again.

Used to love absinthe until... The absinthe incident.

You could play around with a cocktail based on absinthe, lime juice and simple syrup. I used to love them. Toss in some mint and cucumber...

Raspberry Bellini (can you still call it a Bellini if it's made with raspberry? Anyway I prefer that to peach which is a tad too sweet for me).

Long Island Iced Tea. Best one I've ever had was a local version of one in Nashville. Not entirely sure what exactly they put in it but I definitely was happy Grin
