Supplier relationship manager, procurement. It's adjacent to my training/career prior and was a sideways step a few years ago. It's dead boring.
Have a 2 year plan to upskill in prompt design and digital skills like power automate, power bi etc. so I can hopefully make another sideways step in the same company that won't necessarily pay more but should be more interesting. Fed up of the boredom and having to be nice to everyone regardless of how they behave. Would be lovely to look forward to work considering how many hours I'm contracted for.

I think careers in project management can be quite lucrative and have less barriers to entry compared to traditional careers, my friend switched into it and was able to use transferable skills from 2 separate careers specifically for the project management role she went into. She loves it, it pays better and has better work life balance than the other careers she did. I moved into software development about 8 years ago, I was a career switcher, I think I got in at a good time and for the first 2-3 years I had to do lots of extra learning, study, projects in my spare time but now I don’t really and find I pick things up quickly etc, I think if you really want to change and are committed you’ll be ok so don’t be discouraged by all the barrier to entry stuff, although I would stick to newer careers such as tech which require less traditional paths. Not sure about my friend but I earn £50k+ and it didn’t take me very long to get to that point either.
