Breakfast yesterday was sweet potato mash with 2 poached eggs. If I had time I would have attempted to make the sweet potato into some sort of potato cake - not sure how without flour, maybe gram flour? Anyway something to ponder on.

Last night I had baked cod, greens beans, broccoli and freekah. Not sure if freekah is ok or not? Feeling Confused

Cod looks a bit dire! Pasty and plain but it was nice.

Here is more info on it. It is quite smoky and I love the texture. Bit pricey though at £3.99 a small bag when comparing to same weight of cous cous or rice.

Today's menu

Porridge oats with ff milk and a dollop of double cream

Pork fillet with a creamy mustard sauce, veg and new potatoes

No lunch planned as only just had breakfast. Might have fruit and yoghurt or a small salad mid afternoon.

What about a greek salad style one? Feta, black olives, red onion, maybe some thin strips of courgette, garlic and cherry tomatoes. Perhaps with some sliced fried potatoes in it too?

If you've never tried making a greek salad and putting in watermelon in place of olives you've never lived! Give it a try its delicious.

Where did you buy it? It will be prmeium in health shops but it will be cheaper in foreign supermarkets

My menu today:

Oranges whizzed in blender to make juice
Mushrooms fried in butter, garlic and parsley with cheese melted on top ( from the tuna melt idea someone posted yesterday)
Ravenously hungry ( the orange juice?) so now just had cheese and ham salad with a blue cheese dressing made from st augur blue cheese spread ( needs eating) and a little cream. That was lovely, but there are preservatives in it.
Rabbit stew in oven, rather concerned as added some cheap chorizo and it smells a bit putty - like. Linseed oil sort of smell. Confused

@SchrodingersImmigranthrodingers Waitrose - hence the price! Someone on the other thread said it was off plan - I can see why as it is a young wheat which we are supposed to be avoiding because of the omega 6 levels. So guess I won't be having it any more 😥

@Words yeah I reckon you will have had a blood sugar spike with blended oranges even though it has the fibre still in it - which will have made you hungry.

I just had a late lunch of (the other) cod fillet, cherry toms and spinach cooked in a bit of butter. Plus a few blackberries and a tablespoon of greek yog.

I have porridge for breakfasts but may try some smoothies too.

Lunches;

2x Homemade potato salad and salad
2x Greek salad
2x Feta and pea egg muffins
1x Jacket potato

This weeks dinners for me are;

M - Jacket potato, cheese and salad
T - Roast chicken, sweet potato wedges and salad
W - Beef rending
T - Salmon, new potatoes and broccoli
F - Kedgeree
S - Unsure, rest of the family are having homemade pizza
S - Cottage pie

1x snack a day if I want it - greek yoghurt and fruit

We had pork fillet in a mushroom cream sauce.

I sauted some onions and garlic in a little butter, added mushrooms, dried mixed herbs, wholegain mustard, black pepper and fresh chicken stock. Once that was cooked I removed it from the pan. Put the sliced pork fillet in the pan and cooked it for a few mins, flipped it over and after another minute added back the mushroom mix and warmed it through. Added 1 heaped tsp of double cream.

Sauce could have been thicker but I'm not running a restaurant so meh! Tasty.

This morning I had a very late breakfast of smoked drycure bacon from a local farm with smashed avocado.

This afternoon I has a very small Socca. I was making some Socca batter to put in the fridge ready for tomorrow but couldn't resist.

Tonight's meal was a salad of lambs lettuce, rockett, toms, cucumber, sugarsnap peas, salad onions, artichokes, sweet peppers, radish, olives, sun dried tomatoes, marinated mushrooms and half a burrata, I was last and just plugged some olive oil on it. I followed that with one single strawberry because I'm stuffed.
