I think Gaston was awkward around Amy and got himself into messy conversations because she is so awkward and dull and he knows it but couldn't say.
I think it's her that is incapable of going beyond superficial (maybe because it's been very obvious she has never really liked him) and so he never got into relaxed normal mode with her.
