might be a brilliant dish but it just doesn’t meet the brief of being a fish course. The vegetarians I know also prefer vegetarian food not designed to taste like fish or meat.

While I believe them when they say it tastes of the sea and it was awesome, I sincerely think that if you’re not vegetarian/vegan, people actually like to eat a piece of fish.

he’s also getting round the main technical challenge of cooking fish to perfection.

i understand he has personal health issues and wants to open a restaurant that only offered that food, but unless there’s some religious aspect to it, I think a chef should be open to cooking what others want to eat.
