Ramsay was nicknamed reek first when he was captive at winterfell in the books, so he has passed that name onto tyrion but I think it ws to do with the stink of him (ramsay) beforehand remembering this from the book

Reek was ramsay's childhood companion, his only friend and the one who taught him to be a sadist. He had a disgusting smell hence the name reek. Then he was killed and Ramsay took his identity to pretend he wasn't himself. Then he fashioned theon into a replacement reek.
