According to Google it is from a one year old sheep.

What's mutton then?

according to Wiki it's the meat of a 1yr old domestic(?!) sheep

Again according to Wiki it is a castrated male or a ewe. Hogget is from a young male or maiden ewe. Basically whether they've had nookie or not!

Google says mutton is even older!
