Jan 2023 Low Carb Bootcamp - Week 1!

Welcome everyone! We have over 160 people signed up this time, so things are going to move quickly.

Here's the link to The Spreadsheet of Fabulousness which has been carefully and lovingly curated by the very lovely @FinallyHere

There are a few bits of admin that I need to post before we get going. The first of which is the usual disclaimer:

I am not a medic, a scientist, a dietician or a nutritionist. Everything that I post here is based on my reading and my own experiences of low carbing gained over the last 20 years. You follow the guidance here at your own risk - although I very much hope that there are no risks!

Very importantly, though, if you are on any kind of long-term medication, please talk to your GP/nurse about low carbing. This is especially important if you're on drugs for hypertension, cholesterol and/or diabetes, as a low carb diet should have a positive impact on all of those conditions, which would mean that your dosage may need to be decreased, if not removed altogether.

The second is about etiquette:

Please, please, please read all the posts on the thread before you make your own post. These threads work so much better when we're all here interacting with each other, as that means we can offer help and support when it's needed. Don't just jump on the thread to plop down your meals for the day, your weight that day and then just fuck off. That doesn't help anyone.

More than anything else, it's incredibly irritating when someone posts a question which has already been answered early in the thread. I, and lots of other Bootcampers, spend a considerable amount of time responding to people's questions and concerns, and it's pretty insulting when it's obvious that these haven't been read.

(Oh, and it's very obvious if you haven't read the thread, so take that as a warning Wink)

@stayathomegardener please can you PM me with your address? I'm on my phone and can't work out how to PM people. Do you know how to make kefir or would you like instructions as well?

I'll do my best but might take me a little while, total technophobe.

I have made Kefir previously but it all went pink one particularly hot day so I hastily chucked it.

I am interested in dairy free options though as that's never worked for me in the past and I would like to cut down on dairy.

@BIWI thanks for the prod! I do semi plan in the week, but I often don't fancy what I was going to cook so make something else instead. As I largely wfh I find it much easier.

The issues are when I go into the office (twice a week) or weekends, and want to devour all the sandwiches in Pret....I've planned for today and tomorrow!

But I've stuck to it, no birthday cake or sandwiches passed my lips at this morning's party 😇

Just had my chicken fajita bowl and have already drunk all my water so feeling really positive

I was really confused for a moment, thought I’d posted and forgotten as I had a birthday party to navigate then went home and had a chicken fajita bowl 😁

BergamotMouse · 14/01/2023 18:24

I might give yogurt making a go! Will save me a fortune. Could I make a weeks worth at the weekend or will it go off quicker than store bought? I have about 250g each day for breakfast so would probably make about 2L.

BIWI · 14/01/2023 18:34

@Gingerwarthog that's really carby, I'm afraid - a standard can is 330ml, so that would be 11.55g carbs in one can!

OP posts:
BIWI · 14/01/2023 18:37

If you can get hold of Brewdog's Nanny State that's only 1.2g carbs per 100ml, so would be 3.96g carbs per can

Gingerwarthog · 14/01/2023 18:41

Thanks @BIWI
Brewdog it is!

FinallyHere · 14/01/2023 18:51

After 4 days stuck on the scales a pound finally came off today! Hoping it will continue...
Huge thanks to whoever posted the creamy cabbage recipe. Made it tonight and ate it with pork ribs roasted in garlic butter and it was delish.
Have made the cauli cheese for tomorrow and some spiced minced beef and pork for next week. Have upped the fat the last couple of days and not been afraid of cream/butter/cheese but hoping I'm not having too much....?
I am missing beer, wine and juice though. I've bought some nice cans of flavoured fizzy water from M & S but that's about it....any drinks inspiration welcome to stop me reaching for the wine!

mimosa1 · 14/01/2023 19:52

@FinallyHere would you be kind enough to post me at 84kg starting weight into the spreadsheet? I can't seem to make it work on mobile.

Sorted, 😀converted into 185lbs

AllTheBlackCoffee · 14/01/2023 19:58

Good day food wise but a bit lacking in veg and fat, I think. Had Nando's chicken thighs and salad at lunch (only had lemon and herb dressing) and just had HM burger topped with bacon and cheese and salad again with olive oil this time. Will make up for it tomorrow.

On the other hand I've drunk enough water to sink a small ship!!!

Nanny State tastes lovely as well, you wouldn't know it was low alcohol.

Live yogurt keeps really well. I'm sure it would go off eventually but it must take a while as it never has for me. I make three litres at a time then strain it to make Greek yogurt and it easily keeps a week or two with no difference in taste. Sometimes it separates a little but it can be eaten like that or whisked back together.

moleeye · 14/01/2023 20:18

@TheMagicSword haha! #twinning

StuntNun · 14/01/2023 20:19

@stayathomegardener I make raw milk kefir using milk from https://www.gazegillorganics.co.uk/ which is a lot easier for me to tolerate with a mild dairy allergy. Another option would be water kefir but you need different grains for that.

Veryfishy · 14/01/2023 20:24

@Greatly sending solidarity ( and a hot water bottle ) from fellow dry Januaryer

DryWhiteagainW · 14/01/2023 20:42

Tasting menu was mostly fish based with one duck course and 2 puddings. Not too carby apart from the tiny puds. I know I’ll get the BIG STICK but this was literally a once in a life time chance. I had a g and t and then no wine. I’m trying dry January which isn’t difficult as not much in. Feel bad to have cheated after 2 good weeks.

then back down to earth and off to Aldi where I stocked up on green veg and good stuff. Also gone celeriac mad after last nights chip success.

I found frozen cauliflower rice . Has anyone used this? You said to fry it but should I defrost first or fry from frozen? Think it will be watery.

Nugg · 14/01/2023 21:05

Hello! Thanks for all the help today, didn't end up going shopping after all so will look for green curry paste tomorrow.

I'm not really into sweet of rich food, I made the cauliflower cheese. It was really lovely and so easy, but I forgot to put the lemon juice in at the end so would that have made it feel even creamier to me? I used half double cream and half sour cream, because that was all I had left.

Absolutely divine, a big fat pork chop, green veg and cauli cheese and it was so nice to be able to eat all of the crispy juicy fat off the chop 😋

Have to say I don't feel any difference in my clothes so I am not looking forward to getting weighed on Tuesday which is what I ended up getting weighed properly last week because I lost my weight figures from Monday.

But even if it's a relatively disappointing loss, it is still a loss!

Apart from my dinner which was divine I was out for breakfast, so I managed to have a fry up completely within the rules. I've just said none of the bread products I had coffee with a tiny dash of cream because I wasn't sure how much was allowed and then I had egg and cheese salad with lots of mayonnaise for lunch . Absolutely no desire at all to snack anymore which I love because that is my danger time when I'm snacking!

MuthaHubbard · 14/01/2023 21:09

Bacon and scrambled eggs for breakfast - eggs with butter & a spot of cream which was lush.
Wasn't really hungry at lunch so had a bit of cheese and celery.

Tonight's tea was chilli with cauliflower rice. I was of course on automatic pilot and threw in a tin of kidney beans 🙄 ended up picking them out of my portion.

Weekend is when I struggle with water so made a conscious effort today.

Shopping list ready to hit aldi tomorrow

Greatly · 14/01/2023 17:40

I feel properly poorly. Just want to crawl into bed with the electric blanket on.

Solidarity with you Greatly. I’ve got Covid and am feeling the same. Are you ill or feeling keto fluey?

I don’t think I’ve been that good with water today despite despite the ginger lemon teas. ( there may also have been a hot toddy 😬)

ZiggZagg · 14/01/2023 22:05

I've just sat down to catch up with the thread and realized I've not eaten since lunch, im really not hungry so im going to fast until the morning.

Smashed my water and even got some exercise taking little (not so little) Iris for a long walk today. She's gotten so big and is just a darling ♥️

Enjoy your evening campers, I'm off to bed with a good book!

What a gorgeous dog!

Solidarity to those feeling ill and thanks for the spreadsheet help @FinallyHere <185lbs eek>

The pork burgers went down well: dh and ds said that they were the best I'd made so far (and they're a long standing favourite, ever since I made up the recipe): just the right balance of Worcestershire sauce, sage and salt (I have a habit of either under-salting or over-salting them Blush the perils of not actually having a recipe Wink).

800g pork mince made 6 burgers: we only had three (ds wasn't feeling 100% so only had one rather than his usual two) so the other 3 will go in the freezer.
