Morning all

I'm so excited

My Low Carb Food Co order has just arrived!

I've got some bread rolls, a couple of baguettes and wait for it... a low carb pork pie Grin

I'm not going to go overboard with them though- we're going on a walk with friends at the weekend and taking a picnic so that will be the pie. The baguettes are for dipping into melted camembert, and the rolls for occasional bacon sandwiches (and frankenstein McDonalds cheeseburgers!)

I'll have to test one of them today though obvs

Morning everyone! I love looking through the thread and seeing so much real food featured, and so many good ideas to try!

I'm going to try a flour-free cheese sauce to go with my hefty-cut-it-myself-from-a-whole-side-and-its-the-size-of-a-small-dog salmon fillet tonight. I have unearthed some whole green beans from the freezer to accompany it. I think I'm going to melt some cheese in some milk and see how it goes.

Resisting the urge to weigh myself as I get a bit obsessed if I weigh myself daily but equally nervous about what the scales say in Monday: January is really dragging for me so 'only' a couple of pounds of a loss will feel disappointing because it already feels like Monday 17th was at least a fortnight ago!

Yes fab post from ilovecherries, 90lbs is amazing and in the region of what I need to lose so I'm thrilled to hear that it's doable. I am conscious of the need to trust the process as I find my hormones massively affect my weightloss so can find myself losing for 2 weeks then putting a load on and then shifting it in the 4th week, it can often feel like I'm only managing to lose weight 50% of the time so why bother. The rational part of me knows it all averages out at a decent weekly loss but I have to be really careful not to just chuck it all in the fuck-it-bucket if I have a few weeks when dedicated low carbing doesn't show up on the scales.

Also a big thank you to whoever recommended barista style almond milk - it's a hundred times better than the regular stuff. Hasn't curdled in my coffee even once!

@baystard try heating double cream and throwing in the strongest cheddar you can find, with a squeeze of lemon. This is how I do cheese sauce now, picked up from bootcamp. Can't remember who recommended it but it's lovely.

Cheese sauce:

300ml double cream
200g mature cheddar, grated (more if you like!)
Juice of half a lemon
Freshly ground black pepper

Heat cream in a small pan and add the grated cheese; stir till melted then add the lemon juice and pepper.

If you just use milk it will be too thin

It's important that we all remember that weight loss isn't linear. It can be very frustrating, but sometimes it's the case that we can go on - seemingly forever! - with no loss, and then suddenly the scales will drop by 3lbs.

ouchmyfeet, it’s completely doable Smile. For me it does have to be for life though. I always suspected it, but my 4 month foray into carbs when I wasn’t well proved it. I may like them, but for whatever reason (and it’s not calorie related!) they really don’t like me. Or like me far too much so the immediately set up camp on my belly!

I’ve made chicken zoodle soup for lunch with a chicken carcass, celery, shallots, spinach and courgetti. Lots of butter. Smells nice but after cooking it I’m shattered. Need to build my stamina up!

I've put on two kilos but lost an inch round the middle. No idea how. Reckon my body protesting against eating actual meals as opposed to its traditional fare of toast, more toast and yet more toast, accompanied by endless milky tea and alcohol. All good. Making a lovely pastryless quiche for tea with the cheese sauce recipe above, lardons and broccoli...might put some sprouts in lol. Made sprout soup yesterday, gave the dog a run for its money in aftereffects.

We have suffered a sudden bereavement - my very lovely MIL died last night. We only saw them on Saturday and we were making plans for the rest of the year, as she was set to retire in March. She was only 60.

We haven't slept much, just a couple of hours, and I don't really feel like eating much today, but have had some scrambled eggs with veggies and then just had some prawns in mayo with shredded lettuce.

The kids are having all the beige for tea - nuggets, onion rings, sausage rolls etc., as that's what they've asked for. It will be hard to resist but I'm determined! I'm going to try olives, a mini Boursin thing (thanks to whoever pointed that out - yum!) and some cold meat.

Every time I thought I’d caught up I refreshed and found more to read. Got there now though.

Commiserations you those who are poorly.

I am finding all the posts about how we are all different and the dangers of comparing ourselves to others really interesting and helpful.

Waiting at Heathrow for my flight having done my COVID test and thinking about how I navigate the next 5 days on low carb on my ski trip with when I am already the awkward one in the group not eating meat. There will be 3 of us and we will take turns to cook/ muck in together in the evenings and have lunches up the mountain. Might have a big eggy breakfast each day so I can be pickier at lunch time without being starving.

@Baystard - that cheese sauce is amazing. No one can ever think that lchf is about deprivation if this sauce features in a meal. Having it tonight with cauli/broc & spinach & poss a low carb chipolata.

Thanks for reposting the info on alcohol BIWI. Is a alcohol free seedlip gin & low carb tonic acceptable at this point…I think I know the answer but just chancing it…

@ilovecherries I gained 2 pounds in a DAY this week. I know I will lose overall, I know this works, I know my body feels 100% better and I know I have to. But bloody hell does a gain make me want to dive into a vat of chips? Yes, yes it does.

I'm doing Dry January and I'm worried about Feb because exactly what BIWI described happens; I crave carbs. And the lowered inhibition means I'm very tempted with no willpower. I get this sudden urge to snack and after a glass of wine, I'm more likely to give in.

DH is also doing LCHF and wants to give up. He has poop problems (TMI sorry). The fat is causing what fat sometimes causes. Is this likely to abate soon so I can tell him to stick with it, or is it just not for him?

I made an absolutely banging turkey thigh ragu last night. I didn't take measurements but it was basically...

1 big shallot
2 sticks celery
1 small pack mushrooms
1 aubergine

brunoise all the above and gently sweat in butter for 10 mins or so. I added 1 tsp Italian seasoning at this point and deglazed the pan with some elderly red wine

fry off a big pack of turkey thigh mince (higher fat than breast)

combine the two, add a couple of tins of chopped toms, cook down for a while

DSs had it with pasta, I had mine with fried shredded cabbage. Lush.

Today's meals:
B: pack of bresaola on the run
L: mushroom omelette
D: lemon and caper tofu, cauliflower mash, green beans

I had hoped to avoid lunch yesterday after my full English but caved and ordered something in McDonalds. I usually use the app to pre order and that makes customising even easier StuntNun So bunless bacon double cheeseburger with mayo instead of BBQ sauce. It was definitely only a snack but for £2.20 it was nice

Today:
B: 3 rashers bacon
L: bunless chicken bacon burger plus salad at our local farm park. Chicken was a grilled breast so perfect for lchf
D: will be buttered green beans

I keep catching up minus one page then having to disappear so can't post

venus I've already misrepresented what I've eaten and we're only on day 4. I know I'm only lying to myself
