Morning all my lovely campers!

Hopefully the dreaded weeks 3 and 4 are well behind us, and we can now get on with the process of shedding more fat Grin

Thanks all for the flowers - I feel a bit of a fraud as I have made the decision but no firm steps, so hasn't really sunk in IYKWIM.

Right Erhic, have had a look at Zoe Harcombe recipe book and have found the following veggie 'fat' meals:

Aubergine & Halloumi wraps
Aubergine bake
Aubergine boats (I can sense a theme developing)
Burmese curry
Butternut squash curry
Cauliflower Vichyssoise
Egg & Asparagus bake
Eggs benedict
Greek salad
Mediterranean medley
Mexican scrambled eggs
Korma
Mozzerella & tomato salad
mushroom stroganoff
roasted butternut squash soup
roasted red pepper soup (I can vouch for this one - also nice with a little goats cheese sprinkled on top)
Roasted stuffed peppers
Roast veg with pinenuts & parmesan
salsa verde
shakshouka
spinach pate
tzatziki dip
vegetable & ricotta salad (have had this - v good)
vegetable tortilla
venetian frittata

I suspect they will naturally be a bit more carby given the emphasis on aubergine, butternut squash and peppers, but better than driving yourself mad with having the same thing day in day out. I also seem to recall some nice veggie recipes in the IPD cookbook - there is a nice savoury cheesecake, and an aubergine & goatscheese frittata IIRC.

Happy to put some of the recipes on the recipe thread if anyone likes the look of any in particular.

Thank you! How kind you are. I do like butternut squash but aubergines and red peppers are bleurgh! Oh that's the other issue...I'm very fussy! I will have a good look at those though, and I'm very grateful. I'm just a lazy bint I guess Blush

New favourite dinner: grilled LC sausages with buttery mashed swede and greens in garlic butter. YUM YUM YUM YUM YUMMMMMMMM

Well done Beryl, lots of strength to you Flowers

Haven't done all that brilliantly today
Breakfast was total yoghurt, berries and cream
Lunch two black farmer ssausages and two eggs with mayo (picnic with DCs)
Snack of two squares of dark chocolate, tesco thick double cream and 6 blackberries

Dinner will be a roast chicken thigh with a tiny bit of spicy pesto, on some greens or salad

I know I haven't had enough green veg today, and snack is not breaking habit of craving something sweet in the afternoon

Mrsk Did you slap him? where's cuddly gone...

BPC is no dairy first one is Nescafe coffee, butter, coconut oil - blasted in a ninja gives you the second creamy result. ( after settling )

Note don't over fill the cup. I did resulting in messy flood as the butter froths up really well.

Managed a decent day, not too much cheese and I have come in at 40g carbs. Tried to go less but lunch got delayed and by the time I made it I couldn't wait for an egg to boil to I had half an avocado instead.

Decent day here - though I should NOT have bought the bar of Green & Blacks. If I get tempted later it's going in the bin.

B: 3 eggs scrambled
L: Salami, avocado, black farmer sausage
D: Peppered steak, roasted cauli and broccoli, 4 squares chocolate
S: Piece of chedder

I use LucyBee coconut oil. I like the coconut taste, you can get flavourless ones.

Ehric I just buy the extra virgin type from wherever I am shopping when I need it, so Sainsbury, Ocado or M&S. I haven't noticed any difference but the type I buy is coconutty so I use it for Asian type dishes where the flavour is appropriate. Otherwise I tend to use clarified butter for cooking.

Grah do you put the coffee in the Ninja hot?

I tried to whizz some soup and it spurted out the sides (it wasn't even that hot).

I have ended up doing BPCs with the hand blender, but a bit of a faff.

B - plain soya yogurt and chia/flaxseed mix
L - 3x hb eggs, cucumber, olives, 2 slices salami
D - burger with courgette and celeriac

Loads of water but feeling thirsty. Feeling exhausted, can somebody please remind me what helps here? I have stopped iron because of the constipation effect. I am taking vitamin C and zinc, probably could add B vitamins, not sure what else.

Sorry for not commenting on thread properly, I am so tired I am in bed already

If you're thirsty but drinking loads of water, it's a sign that you need more salt.

And if you're tired, how about Vitamin D?

Evening all. I have just bought coconut oil for the first time. I will be looking out for tips on what to do with it!

Today:
B: hard boiled eggs and butter
L: spinach quiche (no pastry) and salad
D: chicken with pesto and Philly, with courgette and French beans

Another pint of water to go.

Coconut oil is good in BPCs and for cooking anything with Asian type flavours so curries, stir fries etc. I just pan fried some salmon fillets in it, which makes the skin really crispy and tasty.

If you gently fry some chillies, ginger and garlic in the coconut oil in a pan then add grated cauli and fry for a bit until it gets nice and slightly toasty, then make a well in the middle of the pan, crack in an egg, wait for it to cook a little whilst scrambling it and the stir it through, you end up with delicious egg fried rice.

I imagine it would also be good for the frying up the pancakes from the pancake recipe.

Today I have been feeling terrible most of the afternoon, nauseous and a terrible headache. Panadol didn't even touch the sides.

I finally feel better now thank goodness, no idea what that was all about!

Anyway I've had

B: 2 bacon and two eggs with hm mayo
L: tuna and hm mayo with celery sticks and a packet of pork scratchings
D: salmon pan fried in coconut oil with mashed swede and more hm Mayo (thank god mayo isn't dairy!), followed by pork scratchings and half a square of chocolate.

3.5 litres of water so far.

I use biona - I get the Virgin coconut flavour one for bpc, smoothies, sweet cooking etc and biona cuisine (unflavoured) for other cooking. It's lightly steamed to remove the coconut flavour. I get a 400g jar of the Virgin for £7.99 and a 610g of the cuisine for £5.99 at my local health food shop (which is better value than Tesco)

About 3 litres of water and a big mug of butter mint tea. I'm not feelin quite as bloated today, which is odd. But never fear, I do have spots coming it feels like though, so yeah. That. Grin

Just checking on to say hello. I haven't weighed myself this week, pre-menstrual and feeling grim. Bad pmt too, does anyone else get worse symptoms when low carbing?

Small confession, I did have a carb tastic meal over the weekend, it was a special celebration and I enjoyed every mouthful. Straight back on the pony though and have been über'ing since.

Crazy few days coming up so have filled the fridge with easily assembled bits.

Going to now rtft and see what everyone's cooking and eating up.

I haven't checked in for a few days. I didn't have a particularly good weekend, Saturday we were out and the only food available was sandwiches and cake Sad I know I should have taken something with me, but I had nothing in the house that was suitable and no time to shop. I need to plan better.

Anyway, back on track. Tonight we had a lovely meal, chicken and chorizo in tomato sauce.

My mum isn't going in for her mri scan until next week and the hysterectomy won't be until two weeks after that at the earliest. I really hope the cancer isn't spreading in the meantime.

Goodness that's scary now, hope she's ok. My Step mum had a full hysterectomy a few months ago now and everything went well, hope you get a good outcome for her. Xxx

Hi five lurking that is really well done to you!

Beryl you needn't feel fraudy at all! The decision bit is the hardest part. I suspect the clock will be ticking for you now.

I have finished my application and an invisible weight has been lifted from my shoulders. I have now got a year to finish writing my fun stuff before I have to get all serious and learny (if they give me a place that is)

Food has been on track perfectly today.

I made the chicken soup and plopped a large chunk of butter into it. That meant the clear broth with a portion of chicken in kept me full all afternoon.

I had a small piece of blue cheese just before I cooked dinner.

Dinner was lamb burgers and broccoli. I steamed the broccoli but mashed in a seriously large chunk of butter. I had one burger, which was made with half a small pack of lamb mince, then about half an hour later, another small chunk of lamb burger.

Fluids - I have had 3 ltrs water (one was the lemon ginger thing) and two large cups of tea.

Only thing not over 100% was vitamin A, C, D, I'll take a multi vitamin for those.
Total carbs 32g after deducting 71g of fibre from Flax seed\Psyllium husk bread.

Must have been missing the fibre as hadn't been for a couple of days did today Smile. 1.5 litres black coffee, 3 litres hot Water with a single green tea bag in.

oh well back to work. C'ya all later.
